Idli Batter Bonda

Punugulu is a very famous Andhra snack. But it is made with idli batter and maida. Since maida is not that much healthy I tried this wheat flour. It is one our favourite snack of my Sithi who prepares it every now and then.

Ingredients:
1 cup
Wheat Flour
¼ cup
Finely Chopped Onion
¼ cup
Chopped Green Chilly
2
Curry leaves
 1 spring
Coriander Leaves
 Handful
Cumin Seeds
1 tbsp
Salt
As required
Oil
For deep fry

Procedure:
1. Mix idly batter and wheat flour with salt.
2. Then add cumin seeds, finely chopped onion, chopped green chillies, chopped coriander and curry leaves.
3. Mix them well. If  the batter is too thick you can add little amount of water or if the batter is not thick you can add wheat flour to bring the batter into a thick consistency. The batter should be thicker than idli batter (the batter should fall as a ball).
4. Heat the oil in a pan, wet the hands with water and drop a gooseberry size balls from the batter.
5. Fry them well on all sides till they becomes golden in color and crisp.
6. Take it out from the oil and drain the oil completely. Then keep it on the kitchen tissue paper to absorb the excess oil.
Have this instant and crispy bonda with tea.
Note:
1.Instead of wheat flour you can try with maid, millet flours etc..

Appam / Aappam with Coocnut Milk

What is aappam? According to my Hubby’s research(because he is a P.hd and always researches something or other), aappam is idli in dosa shape. The best way to have appam is first two have with coconut milk and next with coconut chutney with more chillies added.

Ingredients:
Raw Idli Rice
1 cup
Barboiled Idli Rice
1 cup
Urad Dal
½ cup
Fenugreek Seeds
 1 tbsp
Salt
As required
Cooking Soda
A pinch
 Procedure:
1. Wash and soak both the rice together for 2-4 hours.
2. Wash and soak urad and fenugreek seeds together for 3-4 hours.
3.  Grind the rice into a fine paste with enough water.
4. Grind the urad dal till the urad batter comes soft and flyffy.
5. Mix both off the batter together with salt and keep it 6-8 hours or overnight for fermentation.
6. After fermentation, the batter would have become fluffy.
7. Add enough water to make the batter into a running consistency. At this stage add cooking soda and keep it aside for 5- 10 mins.
8. Now the aappam batter is ready to use.
9. Heat the aappam pan and pour few drops of oil. Then pour 2 ladle full of batter into the pan. Now rotate the pan in a circular motion, so that the batter spreads all over the pan.
10. Now pour few drops of oil and close the lid of the pan. Cook for 2-3 mins.
11. Then take it out from the pan and serve it hot with coconut milk or chutney.

Note:
1. You should not turn over the aappam.
2. Raw rice helps to makes the appam soft.

I didn’t take stepwise photo. I upload it later.

For the first i am including a video in my recipe. Please see it below.
