Pachai Payaru Masiyal / Mashed Green Gram




     This is the second Pachai Payaru Masiyal recipe (earlier recipe here ). The difference in this recipe is that it uses sambar powder. This style is prepared in the villages mostly. It is very tasty and goes well with Chappathis.

Preparation Time: 10 mins  | Cooking Time: 20 mins | Serves: 4
  
Ingredients:
To Pressure Cook:

Whole Green Gram
½ cup
Tomato
1
Chopped Onion
¼ cup
Garlic Pods
5
Sambar Powder
2 tsp
Salt
To taste
Water
As required
Castor Oil
½ tsp
To Temper:

Oil
1 tsp
Mustard Seeds
½ tsp
Cumin Seeds
1 tsp
Curry Leaves
1 spring
Red Chilli
1

 Procedure:
1.  Wash the green gram and keep it aside.
2. Wash and cut the tomato into small cubes. Wash and chop the onions and garlic pods into small pieces.
3. Add washed dal, tomato cubes, chopped onions, chopped garlic pods, sambar powder and salt in a pressure cooker.
4. Then add 1 cup of water and castor oil. Mix them well.
5. Pressure cook them for 3-4 whistles in a medium flame or till the dal becomes tender.
6. Heat the oil in a pan, add mustard seeds, cumin seeds and wait for splutter.
7. Then add the curry leaves and broken red chilli. Fry till the curry leaves becomes crisp.
8. After pressure has gone, add this temper (from 7) and close the lid of the cooker and cook for 5 mins.
9. Then garnish with chopped coriander leaves.
10. Finally, mash this dal mixture with hand blender or electric blender.
    Really yummy and tasty green gram masiyal is ready! This goes well with Rice, Chapathi, Dosai etc.,

Note:
1. Dry roast the dal till nice aroma comes out from the dal. Then allow it to cool down completely and then use. You can use raw dal also.
2. Adjust the water level according to the dal consistency.

The Story of the Green Gram Pasayam / Paasip Payaru Kheer


     About a month back, our family hired a cook to prepare feast for our guests in a family function. While preparing payasam, the cook used Paccaipayaru (Greengram) instead of Paasip paruppu (Moong dal).
 Luckily the payasam turned out to be very good and the Green gram Pasayam recipe was born. I tried it again at home and everyone including my kid lapped it up. Such is the story of Green gram Pasayam.

Preparation Time: 5 mins  | Cooking Time: 25 mins | Yields: 2 cups

Ingredients:
Whole Green Gram
¼ cup
Jaggery Syrup (click here for the recipe)
½ cup
Coconut Milk
½ cup
Ghee
1 tbsp
Cashew Nuts
5
Dry Grapes
10
Cardamom Pods
2

Procedure:
1. Wash and pressure cook the green gram with 1 cup of water for 3 whistles in medium flame or cook until it becomes soft and tender.
2. After pressure has gone, add jaggery syrup and crushed cardamom pods. Mix them well and cook for 3 mins.
3. Then add coconut milk and cook for 2 mins.
4. Meanwhile, heat the ghee in a pan, add cashew nuts and dry grapes. Sauté till they become golden color.
5. Pour this mixture into the green gram mixture. Mix them well and switch off the flame.
 6. Transfer it into serving bowl and serve it warm or chill.
       Yummy and healthy green gram payasam is ready !

Note:
1. Adjust the water consistency according to the payasam level.
2. Add boiled cold milk instead of coconut milk. But coconut milk gives rich taste.

Green Gram / Pachai Payaru / Paasi Payaru Laddo

     Generally people prepare moong dal / Yellow grm laddos, But in our native village ladoos are prepare with whole green gram instead of moong dal. This ladoo is very healthy for kinds because the skin is also used.

Preparation Time: 10 | Cooking Time: 15 mins | Yields: 13 laddus

Ingredients:
Whole Green Gram / Passi Payaru / Pachai Payaru
½ cup
Sugar
6 tbsp (1/4 cup + 2 tbsp)
Ghee
¼ cup
Cardamom Pods
3
Cashew Nuts (otional)

Procedure:
1. Dry roast the green gram in a heavy bottom pan at low flame. Fry them till the green gram becomes golden color and a nice aroma also comes out.
2. Allow it to cool down and grind them into a fine powder using the dry mixie. (don’t cool them completely, grind them when they are still little bit warm)
3. Sieve the powder with fine siever. Keep it aside.
4. Powder the sugar with cardamom pods using the same mixie jar.
5. In a wide bowl, add the green gram powder ( from step 3) and powdered sugar ( from step 4). Mix them well with spoon.
6. Now heat the ghee in a small pan till the ghee melts completely and becomes very hot.
7. Immediately pour this hot ghee into the green gram and sugar mixture (from step 5).
8. Mix them well quickly with spoon. Now the mixture looks like bread crumbs. You should not touch with your fingers. Because the ghee is very hot.
9. After a few seconds, you can mix with your fingers, but while the mixture is warm.
10. Take a small portion from the mixture and make small balls of your choice. Keep it aside and leave it for 15 mins and serve.
   Healthy and tasty green gram laddo is ready.

Note:
1. If you want to make more quantity, dry roast the whole quantity of green gram and powder the sugar separately. But mix them with ghee in batches.

Greengram / Pachaipayir Sundal


Ingredients:
Green Gram Dal
1 cup
Oil
1 tbs
Mustard Seeds
¼ tes
Curry Leaves
1 spring
Red Chilly
3
Onion
1
Carrot
1
Salt
To Taste
Coriander Leaves (Chopped)
2 tbs

Procedure:
1. Wash and pressure cook the dal with 1/3 of water and 2 drops of oil  for 1 whistle in high flame. [Should not over cook]
2. Peel the skin of the carrot and grate it.
4. Chop the onion into small pieces.
5. Heat the oil in a pan, add mustard seeds and wait for popping.
6. Then add the curry leaves, red chillies (cut them into 2 pieces) and onion. Fry till the onion becomes golden color.
7. Now add the cooked dal with water [No need to drain the water from the dal] . Fry till the water evaporates from the dal.
8. Then add the grated carrot, chopped coriander leaves and salt. Fry for 3-4 mins and serve it hot.
  This is a very healthy snack.

Mashed Greengram / Pachaipayir Masiyal

Ingredients:

Greengram

1 cup

Water

2½ cup

Oil

2 tbs

Sambar Onion

½ cup

Mustard Seeds

1 tbs

Urad Dal

1 tbs

Cumin Seeds

2 tbs

Coriander Seeds

1 tbs

Curry Leaves

2 spring

Red Chilly

4

Tomato

1 small

Garlic

4 pods

Turmeric Powder

½ tbs

Salt

To taste

Coriander Leaves

Garnish

Procedure:

1. Clean and fry the Greengram without oil. Then wash them thoroughly.

2. Pressure cook the dal with few drops of oil, turmeric powder and water for 7 mins in medium flame.

3. Heat the oil in a pan, add mustard seeds. When the seeds start popping add urad dal, cumin seeds, coriander seeds, curry leaves, garlic pods and red chillies.

4. Saute for 2 mins and then add the chopped onion and sauté again till the onion becomes golden brown.

5. Then add the mashed tomato and fry for 2 mins.

6. Now add the cooked dal and salt. Stir well and then cook for 5 mins.

7. Beat the dal with hand beater.

8. Garnish with coriander leaves.

Serve hot with plain rice.
