Cucumber Raita / Vellarikkai Thayir Pachadi


Ingredients:
Cucumber
1
Onion
1
Yogurt / Curd
1 cup
Pepper Powder
1 tes
Mine Leaves
10
Coriander Leaves
Handful
Curry Leaves
1 spring
Salt
To Taste

Procedure:
1. Chop the onion and cucumber into very thin slices.
2. Blend the yogurt into a smooth paste.
3. Mix the chopped cucumber, onion, and the remaining ingredients with yogurt. Cucumber raita is now ready to serve.
    This goes well with chapathi, roti and variety rices.

Mango Milkshake

Ingredients:
Mango Pulp
½ cup
Cold Milk
1 cup
Fresh Cream
2 tbs
Sugar
2 tbs
Ice Cubes
5

Procedure:
Blend all the ingredients together till the milkshake become frothy.
Serve it chill and Enjoy.

Princess of Juices


 
Ingredients:
Sappotta / Cikku
4
Dates
2
Grated Coconut
2 tbs
Honey
2 tbs
Cardamom
2
Palm Sugar / Panangkarkandu
2 tbs
Ice Cubes
5
Salt
A Pinch

Procedure:
1. Remove the seeds of the chikku and dates.
2. Blend all the ingredients with little water for 1 minute.
3. Extract the juice and serve it chill.  Enjoy!!!

Banana Coffee Milkshake



Ingredients:
Boiled Cold Milk
1 cup
Banana
1
Coffee Syrup (decoction)
2 + 1 tbs
Sugar
1 tbs
Ice Cubes
5

Procedure:
1. Blend all the ingredients except 1 tbs of coffee syrup at high speed till the mixture becomes frothy.
2. Make a Topping with remaining 1 tbs of coffee syrup.
3. Serve it chill and enjoy!!!

Brinjal Tomato Sabji / Kaththarikkai Kothsu



Ingredients:
Brinjal
4
Tomato
2
Green Chilly
4
Turmeric Powder
¼ tes
Tamarind
Gooseberry size
Oil
2 tbs
Mustard Seeds
¼ tes
Channa Dal
½ tbs
Asafoedita
¼ tes
Curry Leaves
1 spring
Sambar Onion
20
Jaggery
1 tbs
Salt
To Taste
Coriander Leaves
For Garnish

Procedure:
1. Heat 1 tbs of oil in a cooker, add green chillies (cut them into two halves), Chopped brinjal, turmeric powder, tamarind juice and little water.
2. Pressure cook for 2 whistles in a medium flame.
3. After pressure has gone, mash them well and keep it aside.
4. Heat the remaining oil in a pan, add mustard seeds and allow it for splitter.
5. Then add channa dal, curry leaves, Asafoedita and finely chopped onion. Fry till the onion becomes golden color.
6. Now add the chopped tomatoes and fry till they becomes mushy.
7. Then add then mashed mixture, jaggery, salt and little water. Allow it to boil. Garnish with coriander leaves.
    Katharikkai kothsu is ready to eat. It goes well with Pongal, Idly and Dosas.

Dal Paaya




Ingredients:
Split Green Gram / Paasipparuppu/ Moong Dal
½ cup
Oil
1 tbs
Cinnamom
1
Cloves
2
Bay Leaf
1
Onion
1
Green Chilly
4
Tomato
2
Turmeric Powder
¼ tes
Coconut Milk
½ cup
Curry Leaves
1 Spring
Coriander Leaves
Handful
Salt
To Taste

 Procedure:
1. Wash and pressure cook the dal with ¼ cup of water for 2 whistle in high flame.
2. Chop the onion and green chillies into small pieces.
3. Heat the oil in a pan, add cinnamom, cloves, cardamom, bay leaves, green chillies and onion. Fry till the onion turns into golden color.
4. Then add the chopped tomatoes and fry till they becomes mushy.
5. Now add the cooked dal, turmeric powder and salt. Add water if necessary. Cook till it becomes thick.
6. Add the coconut milk and cook for a minute. Switch off the stove. Finally add the curry leaves coriander leaves.

This Dal Paaya goes well with Chapathi and Dosas.

Healthy Green Buttermilk




Ingredients:
Curd / Yogurt
1 cup
Mint / Puthina Leaves
¼  cup
Coriander Leaves
1/4cup
Curry Leaves
¼ cup
Ginger
1 inch
Green Chilly
½ or 1
Water
2 cups
Ice Cubes (Optional)
5
Salt
To Taste

Procedure:
1. Clean and wash the Mint, Coriander and Curry leaves.
2. Remove the skin of the ginger.
3. Grind greens, ginger and green chilly with little water.
4. Then add the curd and salt. Beat them for a minute.
5. Now extract the butter milk. Now add the remaining water and mix them well.
6. Serve it chill (add ice cubes) or as it is.

This is really healthy and refreshing drink.I have got this idea from my grandma.

Procedure:
Blend all the ingredients together and extract the juice. Serve it chill. Enjoy!!!

Carrot Masala



Ingredients:
Carrot
2
Sambar Onion
10
Curry Leaves
 1 spring
Grated Coconut
1 tbs
Red Chilly Powder
1 tes
Garlic Pods
3
Aniseeds
1 tes
Oil
1 tbs
Mustard Seeds
¼ tes
Salt
To taste

Procedure:
1. Wash and peel the skin of the carrot. Cut the carrot into small pieces.
2. Chop the onion into thin slices.
3. Grind the coconut, red chilly powder, garlic pods and aniseeds with little water into a fine paste.
4. Heat the oil in a pan, add mustard seeds and wait for popping.
5. Then add curry leaves and chopped onion. Fry till the onion turns into golden color.
6. Now add the ground paste, salt and chopped carrot pieces.
7. Mix them well and add little water if necessary. Close the lid of the pan and cook till the carrot becomes soft.
    This masala goes well with Rasam Rice and Curd Rice.
