Nendran Banana Chips / Kerala Banana Chips


We always buy Nendran Banana Chips at shops. Even though this is a very good snack, we worry because of the oil used. The best alternative is to prepare at home itself. It is a quiet easy only and will be good to try at home.

Preparation Time: 5 mins  | Cooking Time: 10 mins | Yields: 1 ½ cup

Ingredients:
Raw Nendran Banana
1
Salt
To taste
Coconut Oil or Any Cooking Oil
To deep fry the chips

Procedure:
1. Take 1 tsp of water in a small bowl and add required salt. Mix them well till the salt dissolves in the water completely. Keep it aside.
2. Heat the oil in a frying pan.
3. Cut the head and tail of the banana.
4. Using the knife, slit the skin of the banana at 3-4 places vertically. Now it will be easy to remove the skin of the banana.
5. Now slice the banana into very thin slices using the slicer into the hot oil. Be careful at this stage. [ Refer Video]
6. After few seconds, add the salt water (from 1). Now you will get lot of sound from the pan. Don’t panic. Leave it for few seconds.
7. Then using the ladle, turn over the banana slices and cook till the bubbles stops completely. Keep the flame at medium through out the process.
8. Now using the ladle, take the chips and drain the oil. Using the tissue paper, extract the excess oil too.
9. Allow it to cool down completely and then store it in an air tight container.
         
  Wow really yummy and crispy homemade Nendran Banana Chips is ready to bite!

Note:
1. No need to add turmeric powder because the banana itself has the yellow color.
2. You can also slice a banana into a plate and then put them into the hot oil later.
3. Coconut oil gives very nice aroma to the chips.
4. Don’t overload too many slices into the oil.

Beetroot Chips | Chips Recipes

     Beetroot chips are very colorful and attractive yet are a healthy snack. I saw this recipe in a magazine long time back but forgot where. Chips are usually fried fruits or vegetable slices only. This beetroot chips is fried only after adding a thin coat of besan flour and rice flour just like bajji. Since the coating is very thin, we are calling it as chips only.

Preparation Time: 7 mins  | Cooking Time: 15 mins | Serves: 4

Ingredients:
Beetroot (medium size)
1 (150 gm)
Besan Flour / Kadalai Maavu
¼ cup
Rice Flour
2 tbsp
White Sesame Seeds
2 tsp
Red Chilli Powder
3 tsp
Asafoedita / Hing
¼ tsp
Salt
1 tsp or As Required
Water
3 tbsp
Oil
For Deep Fry

Procedure:
1. Wash and peel the skin of the beetroot.
2. Cut it into four equal parts vertically.
3. Then slice them into thin slices using the slicer. Keep it aside.
4. In a wide bowl, add besan flour, rice flour, sesame seeds, red chilli powder, hing and salt. Mix them well.
5. Then add the beetroot slices (from 3). Mix them gently without damage the slices.
6. Sprinkle the water and mix them well. Leave if for just 2 mins.
7. Heat the oil in a pan, put the slices into the hot oil and fry till the sizzle sounds stops.
8. Take them out from the oil and drain the oil completely. Then keep it on the tissue paper to remove the excess oil. 
9. Allow them to cool down completely and store it in an air tight container for later use.

       Tasty and crispy chips is ready to serve.

Note:
1. Mine took nearly 3 tbsp water or adjust the water quantity till the flour mixture coat well with the slices.

2. Fry the slices bath by batch. Do not overload the frying pan.

Bitter Gourd / Pavakkai Fry

     Bitter Gourd is very good for stomach as it cleans the worms in stomach. However it is very bitter and kids will hate to take it. I had earlier posted a recipe (Bitter Gourd Chips) which makes the Bitter Gourd very tasty; This Fry is a variation of that recipe and this can be thought of as Bitter Gourd Bajji.



Recipe Cuisine : South Indian | Recipe Category: Fry
Preparation Time: 15 mins  | Cooking Time: 10 mins | Serves: 2

Ingredients:
Bitter Gourd (medium size)
2
Gram Flour / Kadalai maavu
6 tbsp (1/4 cup + 2 tbsp)
Rice Flour
2 tbsp
Ginger Garlic paste
1 tsp
Red Chilly Powder
 ½ tsp
Coriander Powder
2 tsp
Lemon Juice
1 tsp
Salt
Required
Oil
For deep fry

Procedure:
1. Wash and dry the bitter gourd using the kitchen towel.
2. Cut it into thin circles and remove the seeds from the circles.
3. Collect the circle pieces in a bowl, sprinkle salt and turmeric powder. Mix them gently and keep it aside for 15-30 mins.
4. After 15 mins, drain the water collected at the bottom of the bowl. This helps to reduce the bitterness. Otherwise you can use it directly. Skip the step 3 and 4.
5. Take gram flour, rice flour, red chilli powder, coriander powder, ginger garlic paste, lemon juice and salt in a bowl.
6. Mix them gently and sprinkle over the bitter gourd pieces (from 4) , mix them gently and sprinkle water if you need.
7. Then keep it aside for 2 mins. Then heat the oil in a pan for deep fry, sprinkle the bitter gourd rings and fry they become golden color.

    This fry goes well with rice and is a super evening snack too.

Bitter Gourd / Paavakkai Chips

This bitter gourd fry or chips is crispy. The recipe will make those who dislike Bitter gourd also to relish them.






Ingredients:

Bitter Gourd
½ kg
Corn Flour
2 tbs
Red Chilli Powder
1 tes
Salt
As required
Oil
For deep fry

Procedure:
1. Wash and cut the bitter gourd into round and thin slices as shown in the picture. Remove the seeds from it.
2. Sprinkle little bit salt over the bitter gourd slices and mix them well. Keep it aside for 10-15 mins. Then drain the water which comes out from the bitter gourd.(this is to avoid the bitterness of the bitter gourd)
3. Then add corn flour, red chilli powder and salt. Mix them well and set aside for 5 mins. No need to add water. Suppose you feel it is dry then just sprinkle the water and mix.
4. Heat oil in a pan. When the oil is hot then sprinkle the bitter gourd slices. Fry them until they becomes golden in color.
5. Allow it to cool down and store it in air tight container.
  Now the bitter gourd chips is ready to serve.
