Paavakkai Fry / Bitter Gourd Fry


I myself have posted many Bitter Gourd recipes including Bitter Gourd Chips. The specialty of this recipe is that it removes the bitterness altogether and makes the recipe taste great.

Recipe Cuisine : South Indian | Recipe Category: Fry
Preparation Time: 10 mins  | Cooking Time: 20 mins | Yields: 20 cookies

Ingredients:
Bitter Gourd
¼ kg
Bengal Gram Flour / Kadalai Maavu
1 tbsp
To Temper:

Oil
2 tsp
Mustard Seeds
½ tsp
Chopped Onion
¼ cup
Red Chilli Powder
1-2 tsp
Salt
Required

Procedure:
1. Wash and cut the head and tail of the bitter gourd.
2. Then cut them into thin circles.
3. Remove the big seeds from the slices. Keep it aside.
4. Heat the oil in a pan, add mustard seeds and wait for popping.
5. Then add chopped onion and sauté till they become translucent.
6. Now add the bitter gourd pieces (from 3) and fry for a minute.
7. Add red chilli powder and salt. Mix them well and fry for 2 more mins.
8. Then add water till all the bitter gourd slices immersed completely.
9. Close the lid of the pan and cook till the bitter gourd become tender and all the water evaporates completely.
10. Finally add the Bengal gram flour and mix them well. Switch off the flame and transfer it into serving bowl.
      Tasty and healthy Bitter Gourd Fry is ready!

Note:
1. Adjust the red chilli level according to your taste.

Sun Dried Bitter Gourd / Pavakkai Vathal | Vathal Recipes


Few days back, I had posted a summer vathal recipe. This is in continuance with that, with the change being the ingredient used. Pavakkai is another healthy vegetable but kids tend to dislike it. Pavakkai Vathal makes it a tasty side dish and people will surely like it.

Preparation Time: 20 mins  | Drying Time : 2-3 days

Ingredients:
Bitter Gourd
½ kg
Salt
1 tsp
Turmeric Powder
½ tsp

Procedure:
1. Wash and cut the head and tail of the bitter gourd.
2. Then cut them into thin circles.
3. Remove the big seeds from the slices. Put the slices in a bowl.
4. Now sprinkle the salt and turmeric powder over the de-skinned slices.
5. Mix them gently or toss them gently and close the lid of the pan. keep it aside for 15-30 mins.  
6. After 30 mins, you can get water from the bitter gourd pieces. Now discard the water or strain the bitter using the strainer.
7. Now spread the bitter gourd over clean cloth under sun light. Keep it under sun light for 2-3 days or the bitter gourd slices become crisp.
8. Store it in an air tight container for later use.
9. Heat the oil in a pan, add sun dried bitter gourd/pavakkai vahtal and fry till they become crispy.
10. Remove from the oil and spread over the tissue paper to remove excess oil.
   Yummy and healthy bitter gourd vathal is ready to serve with curd rice.

Note:
1. You can add red chilli powder with turmeric powder.
2. You can make kuzhambu also with this vathal.

Bitter Gourd / Pavakkai Fry

     Bitter Gourd is very good for stomach as it cleans the worms in stomach. However it is very bitter and kids will hate to take it. I had earlier posted a recipe (Bitter Gourd Chips) which makes the Bitter Gourd very tasty; This Fry is a variation of that recipe and this can be thought of as Bitter Gourd Bajji.



Recipe Cuisine : South Indian | Recipe Category: Fry
Preparation Time: 15 mins  | Cooking Time: 10 mins | Serves: 2

Ingredients:
Bitter Gourd (medium size)
2
Gram Flour / Kadalai maavu
6 tbsp (1/4 cup + 2 tbsp)
Rice Flour
2 tbsp
Ginger Garlic paste
1 tsp
Red Chilly Powder
 ½ tsp
Coriander Powder
2 tsp
Lemon Juice
1 tsp
Salt
Required
Oil
For deep fry

Procedure:
1. Wash and dry the bitter gourd using the kitchen towel.
2. Cut it into thin circles and remove the seeds from the circles.
3. Collect the circle pieces in a bowl, sprinkle salt and turmeric powder. Mix them gently and keep it aside for 15-30 mins.
4. After 15 mins, drain the water collected at the bottom of the bowl. This helps to reduce the bitterness. Otherwise you can use it directly. Skip the step 3 and 4.
5. Take gram flour, rice flour, red chilli powder, coriander powder, ginger garlic paste, lemon juice and salt in a bowl.
6. Mix them gently and sprinkle over the bitter gourd pieces (from 4) , mix them gently and sprinkle water if you need.
7. Then keep it aside for 2 mins. Then heat the oil in a pan for deep fry, sprinkle the bitter gourd rings and fry they become golden color.

    This fry goes well with rice and is a super evening snack too.

Bitter Gourd / Paavakkai Chips

This bitter gourd fry or chips is crispy. The recipe will make those who dislike Bitter gourd also to relish them.






Ingredients:

Bitter Gourd
½ kg
Corn Flour
2 tbs
Red Chilli Powder
1 tes
Salt
As required
Oil
For deep fry

Procedure:
1. Wash and cut the bitter gourd into round and thin slices as shown in the picture. Remove the seeds from it.
2. Sprinkle little bit salt over the bitter gourd slices and mix them well. Keep it aside for 10-15 mins. Then drain the water which comes out from the bitter gourd.(this is to avoid the bitterness of the bitter gourd)
3. Then add corn flour, red chilli powder and salt. Mix them well and set aside for 5 mins. No need to add water. Suppose you feel it is dry then just sprinkle the water and mix.
4. Heat oil in a pan. When the oil is hot then sprinkle the bitter gourd slices. Fry them until they becomes golden in color.
5. Allow it to cool down and store it in air tight container.
  Now the bitter gourd chips is ready to serve.
