Cabbage Peas Poriyal | Muttaikose Pattani Poriyal | Poriyal Recipes

 


Cabbage poriyal is a very staple recipe in South Indian cooking. By just adding peas, we can transform the cabbage poriyal into a crunchy taste.

Ingredients:

Fresh Peas – ½ cup

Cabbage – ¼ kg

Coconut Oil / Cooking Oil – 2 tsp

Mustard Seeds – ½ tsp

Cumin Seeds – 1 tsp

Channa Dal – 1 tbsp

Curry leaves – 1 spring

Green Chilli – 2

Finely Chopped Onion – ¼ cup

Grated Coconut – 2 tbsp

Salt – As required

Method:

Wash and cut the cabbage into thin slices.

Steam cook the peas for 3 mins. In the same  pot, add cabbage and steam cook them (both cabbage and peas) for 3 mins. Remove from the pot and keep it aside.

Heat the oil in a pan, add mustard seeds and wait to splutter.

Add cumin seeds and channa dal. Sauté for few seconds.

Add curry leaves and fry till they crisp.

Add chopped green chillies and fry for a min.

Add chopped onion and fry till they become translucent.

Add the steam cooked cabbage peas mixture. Add salt and mix them well. Close the lid of the pan and cook for 2 mins.

Finally add the coconut and mix them gently. Switch off the flame and leave it for few more mins. Then transfer to serving bowl.

Yummy and tasty cabbage peas stir fry is ready. Serve with sambar rice, rasam rice or any rice varieties.

Note:

Why Steam cooking?

1.       Steam cooking retains the colors of the vegetables.

2.       Steam cooking also retains the micro ingredients in a vegetables.

3.       After steam cooking the water content will be absent in the vegetables( like pressure cooking).

Vazhaipoo Poriyal / Banana Flower Stir Fry | Vazhaipoo Recipes


This is a regular recipe which everyone makes. This is my style of vazhaipoo porial.

Recipe Cuisine : South Indian | Recipe Category: Stir Fry / Poriyal
Preparation Time: 10 mins  | Cooking Time: 20 mins | Yields: 2 cups

Ingredients:
Chopped Banana Flower
2 cups ( 1 cup = 240 ml)
Split Green Gram (moong dal / Pasiparuppu)
¼ cup
Turmeric Powder
½ tsp
Salt
As required
To Temper:

Oil
2 tsp
Mustard Seeds
½ tsp
Chana Dal / Kadalai Paruppu
1 tsp
Green Chilli
2
Curry Leaves
1 spring
Chopped Onion
½ cup
To Taste:

Grated Coconut
¼-1/2 cup


Procedure:
1. Pressure cook the chopped banana flower, turmeric power and split green gram with ¼ cup of water for 2 whistle in medium flame.  Allow it to cool down completely.
2. Heat the oil in a pan, add mustard seeds and wait for popping.
3. Add chana dal and fry for few seconds.
4. Add curry leaves and fry till they become crisp.
5. Add chopped green chillies and sauté for few seconds.
6. Add chopped onion and sauté till they become translucent.
7. Add cooked banana flower and dal mixture (from 1) and salt. Mix them well and cool till the water evaporates completely.
8. Finally add grated coconut; mix them gently and switch off the flame. Leave it for 2 mins in the pan itself.
    Healthy banana flower stir fry/ vazhai poo poriyal ready to serve with any type of rice recipes.

Note:
1. Addition of more onion reduces the bitterness of the banana flower.
2. Addition of coconut also reduces the bitterness.
3. Adjust the green chilli level according to your taste.
4. You can make stir fry without moong dal also.
5. If you clean the banana flower at once and store it, you can use it in batches whenever you want.

Chow Chow Kadalai Paruppu Kootu / Chayote Kootu


Most of the kootu recipe use moong dal (pasi paruppu). But my mother uses channa dal ( kadalai paruppu). This simple change gives a different but good taste. You can have this with not only rice but also chapathi, dosa, etc.,

                    Preparation Time: 15 mins  | Cooking Time: 20 mins | Yields: 20 cookies

Ingredients:
Chow Chow
1
Chana Dal / Kadalai Paruppu
¼ cup
Salt
As required
To Fry and Paste:

Oil
1 tsp
Chana Dal / Kadalai Paruppu
1 tbsp
Red Chilli
2
Cumin Seeds
1 tsp
Coriander Seeds
1 tsp
Grated Coconut
3 tbsp
To Temper:

Oil
2 tsp
Mustard Seeds
½ tsp
Curry Leaves
1 spring
Finely Chopped Onion
¼ cup

Procedure:
1. Remove the skin and seeds of the chow chow. Then cut it into small ½ inch pieces.
2. Pressure cook the ¼ cup of channa dal with ¼ cups of water for 3 whistles in medium flame or till the dal becomes tender.
3. After pressure has gone, remove the cooked dal from the cooker and drain the water come pletely. Keep it aside.
4. Meanwhile, heat 1 tsp of oil and fry channa dal, red chillies, coriander seeds, and cumin seeds, till the nice aroma comes out from the mixture.
5. Then add grated coconut and fry for 1 mins then switch off the flame. Allow it to cool down completely.
6. Grind the above fried mixture into fine paste using the mixie with little water. Keep it aside.
7. Heat the oil in a pan, add mustard seeds and wait for popping.
8. Add curry leaves and sauté for few seconds.
9. Add chopped onion and sauté till the onion becomes translucent.
10. Add Chopped chow chow pieces (from 1) and ¼ cup of water. Mix them well and close the lid of the pan.
11. Stir the mixture occasionally. Cook till the chow chow becomes tender.
12. Add the ground masala (from 6), cooked channa dal ( from 3)  and salt. Mix them well and cook till the mixture becomes thick.
   Aromatic and yummy chow chow stir fry is ready to serve. Serve it with rice, roti and chapathi.

Note:
1. Adjust the channa dal level according to your taste.
2. Adjust the chilli level according to your spice level.

Elephant Foot Yam Fry - Senai Kizhangu / Karunai Kizhangu Fry


We can make lot of dishes like fry, curry etc., This yam fry is tasty and very spicy. It goes well with dal, rasam and curd rice. Kids will eat separately also.

Ingredients:
Elephant Foot Yam
¼ kg
Turmeric Powder
¼ tsp
Salt
¼ tsp
Oil
To deep fry
Red Chilli Powder
1 tsp
Salt
½ tsp

Procedure:
1. Remove the black skin of the yam carefully.
2. Then cut the yam into 1 inch cubes.
3. Pressure cook them with ¼ cup of water, turmeric powder and ¼ tsp of salt for 1 whistle in a high flame.
4. After the pressure has gone, strain the water from the cooked yam using the juice strainer.
5. Now spread the cooked yam over the news paper for 15 mins to dry.
6. Then heat enough oil in a pan and when oil is hot, put some of the cooked yams. Don’t over load the pan.
7. Fry till the sizzle sounds stops completely. Then remove the fried yams from the oil and spread them over the tissue paper to absorb the excess oil.
8. Now add the red chilli powder and salt. Mix them well or toss them carefully.  Crispy and yummy yam fry is ready to serve.

Note:
1. Apply oil on your hand to avoid itching while cutting the yam.
2. Adjust the salt and spice level according to your taste.
3. After frying all the yam, put salt and chilli powder immediately and toss it. If the yam gets losses heat, the powders will not stick the yam.

Beetroot Stir Fry / Grated Beetroot Poriyal


Typically we use Beetroot cut into pieces as Pooriyal. Since Beetroor is a readily available and healthy food, we need to have varieties of recipes with Beetroot so that there is no fatigue if we use it frequently. If we grate Beetroot, we can use it as poriyal also and as sidedish for chappathi also.

Preparation Time: 10 mins  | Cooking Time: 15 mins | Yields: 1 cup

Ingredients:
Beetroot
1/4 kg
To Temper:

Oil
2 tsp
Mustard Seeds
¼ tsp
Split gram / Chana dal
½ tsp
Curry Leaves
1 spring
Chopped Onion
¼ cup
Red Chilli
2
Salt
As required

Procedure:
1. Wash and remove the skin of the beetroot using the grater.
2. Then grate the beetroot using the grater with small holes.
3. Heat the oil in a pan, add mustard seeds and wait for popping.
4. Add chana dal / kadalai paruppu and fry till it becomes golden color.
5. Add curry leaves and sauté till the leaves become crisp.
6. Add red chillies (break it into two halves) and fry for few seconds.
7. Add finely chopped onion and fry till they become translucent.
8. Add grated beetroot (from 2), salt and ¼ cup of water. Mix them well.
9. Close the lid of the pan and cook till the beetroot becomes tender. Stir the mixture occasionally because avoid to stick the bottom of the pan.
11. Transfer the stir fry into a serving bowl and enjoy.
        Serve this beetroot fry with any rice varieties or chapathis.

Note:
1. Adjust the red chilli level according to your taste.

Drumstick Stir Fry / Murungaikkai Poriyal


Drumstick Sambar has become so stereotype that it has become the only way to have Drumstick. A good alternative recipe for Drumstick is Spicy Drumstick Fry. It will be a good sidedish for Sambar Rice recipes and also Curd Rice.

Preparation Time: 10 mins  | Cooking Time: 15 mins | Yields: 1 cup

Ingredients:
Drumsticks (1 inch pieces)
2 cups
Salt
As required
To Temper:

Oil
2 tsp
Mustard Seeds
¼ tsp
Curry Leaves
1 spring
Finely Chopped Onion
½ cup
Finely Chopped Tomato
1 cup
1 tbsp
Turmeric Powder
¼ tsp
To Garnish:

Finely Chopped Coriander Leaves
1 tbsp

Procedure:
1. Wash and cut the head and tail of the drumstick. Then chop them into 1 inch pieces. Keep it aside.
2. Heat the oil in a pan, add mustard seeds and wait for popping.
3. Add curry leaves and fry for few seconds.
4. Add finely chopped onion. Sauté till they become translucent.
5. Add finely chopped tomatoes and fry till they become mushy.
6. Now add the sambar powder, turmeric powder and salt. Mix them well.
7. Then add chopped drumstick pieces (from 1) and ½ cup of water. Mix them well.
8. Close the lid of the pan and cook it in a medium flame. Stir them occasionally.
9. Cook till the drumstick pieces become tender and the mixture becomes thick.
10. Finally add chopped coriander leaves and mix them well.


     Yummy and delicious drumstick stir fry is ready to serve.
