Elephant Foot Yam Fry - Senai Kizhangu / Karunai Kizhangu Fry


We can make lot of dishes like fry, curry etc., This yam fry is tasty and very spicy. It goes well with dal, rasam and curd rice. Kids will eat separately also.

Recipe Cuisine : South Indian | Recipe Category: Fry
Preparation Time: 10 mins  | Cooking Time: 15 mins

Ingredients:
Elephant Foot Yam
¼ kg
Turmeric Powder
¼ tsp
Salt
¼ tsp
Oil
To deep fry
Red Chilli Powder
1 tsp
Salt
½ tsp

Procedure:
1. Remove the black skin of the yam carefully.
2. Then cut the yam into 1 inch cubes.
3. Pressure cook them with ¼ cup of water, turmeric powder and ¼ tsp of salt for 1 whistle in a high flame.
4. After the pressure has gone, strain the water from the cooked yam using the juice strainer.
5. Now spread the cooked yam over the news paper for 15 mins to dry.
6. Then heat enough oil in a pan and when oil is hot, put some of the cooked yams. Don’t over load the pan.
7. Fry till the sizzle sounds stops completely. Then remove the fried yams from the oil and spread them over the tissue paper to absorb the excess oil.
8. Now add the red chilli powder and salt. Mix them well or toss them carefully.  Crispy and yummy yam fry is ready to serve.

Note:
1. Apply oil on your hand to avoid itching while cutting the yam.
2. Adjust the salt and spice level according to your taste.
3. After frying all the yam, put salt and chilli powder immediately and toss it. If the yam gets losses heat, the powders will not stick the yam.

Pori Urundai / Puffed Rice Balls - Karthigai Deepam Recipes


Pori Urundai is a very neglected snack recipe enough though it is very easy, sweet, tasty and healthy. I think Pori Urundai was associated with Karthigai deepam which comes immediately after diwali because Pori Urundai is light sweet and it is not good to have heavy sweet just some time after the diwali festival when we have already had enough heavy sweets. Make Pori Urundai as often  and especially as a sweet balance when you preparing some spicy puffed rice.

Recipe Cuisine : South Indian | Recipe Category: Sweets
Preparation Time: 5 mins  | Cooking Time: 10 mins | Yields: 14 Balls

Ingredients:
Pori / Puffed Rice
2 cups (1 cup = 240 ml)
Grated Jaggery
½ cup
Water
¼ cup
Cardamom Pods
2

Procedure:
1. In a heavy bottom pan, add jaggery, crushed cardamom pods  and water. Cook them in a medium flame.
2. Mix them well with ladle.
3. Wait until the jaggery melts completely. Then strain the jaggery syrup with steel strainer.
4. Pour this strained syrup in the same pan and cook it in a medium flame.
5. After few mins the color of the syrup will change. At this stage you can check the syrup consistency.
6. Take water in a small bowl, pour few drops of the syrup and able to make ball from the syrup is the correct consistency.
7. If you cannot make ball, cook until you reach this consistency level.
8. After you reach this level, switch off the flame.
9. Add puffed rice with this syrup and mix them gently and carefully.
10. Then grease your hands with oil and immediately make lemon size balls from the pori mixture.
           Tasty and healthy pori urundai is ready to serve.



Note:
1. If You  switch off the flame before the sugar syrup reaching the correct ball like consistency level, you cannot make puffed balls.

2. After mixing the pori with jaggery, immediately make all the pori mixture into rough balls which can later shaped properly. Don’t delay by shaping all the balls in the first attempt because if the pori mixture looses heat, it will be difficult to shape into balls.

Sweet Puffed Rice / Inippu Pori



Ingredients:
Puffed Rice / Pori
1 cup
Jaggery
2 tbs
Ghee
1 tbs
Drumstick Leaves
1 tbs
Curry Leaves
1 spring

Procedure:
1. Heat the ghee in a pan, add drumstick leaves and curry leaves.
2. After few seconds add the puffed rice and mix them well.
3. Now switch off the stove, and then add the powdered jaggery. Mix them well and serve it immediately.

Spicy Veg Puffedrice / Kara Pori




 Ingredients:
Puffed Rice / Pori
1 cup
Grated Carrot
2 tbs
Grated Beetroot
1 tbs
Roasted Gram / Pottukkadalai
2 tbs
Chopped Onion
2 tbs
Curry Leaves
1 Spring
Chopped Coriander Leaves
1 tbs
Tomato (small size)
1
Red Chilly Powder
1 tes
Coconut Oil
1 tbs
Amture Powder
½ tes
Chaat Masala
1 tes
Salt
A Pinch

Procedure:
1. Remove the seeds and flesh of the tomato and cut it into small pieces.
2. Mix all the ingredients well and serve it immediately.

Quick and Easy Snack with Puffed Rice



Ingredients:
Puffed Rice
1 Cup
Sambar Onion
¼ Cup
Green Chilly
1
Cumin Seeds
1 tbs
Roasted Gram / Pottukadalai
2 tbs
Curry Leaves
1 spring
Coriander Leaves(Chopped)
2 tbs
Coconut Oil
1 tbs

Procedure:
1. Chop the sambar onion into very small pieces.
2. Wash and chop the green chilly into thin circular shape.
3. Chop the coriander leaves into small pieces.
4. Mix all the remaining ingredients with chopped ingredients well.
     Serve it immediately with Tea. Enjoy!!!

Ok now moving on to Spicy Puffed Rice.....




Ingredients

Puffed Rice

2 cups

Coconut Oil

4 tbs

Mustard Seeds

½ tbs

Garlic

4 pods

Red Chilly

2

Curry Leaves

1 spring

Ground Nuts

¼ Cup

Roasted Gram Dal

¼ Cup

Turmeric Powder

¼ tbs

Asafoetida

¼ tbs

Procedure:

1. Heat the coconut oil in a wide pan, add mustard and wait for popping.

2. Then add red chillies (split them into small pieces), chopped garlic, curry leaves, ground nuts and roasted grams. Fry till the roasted gram changes its color.

3. Add turmeric and asafetida and fry for a minute.

4. Finally add the puffed rice and mix them well for 2-3 mins. Then switch off the stove.

5. Keep it aside till it cools down.

6. After its gets cooled, store it in a air tight container.

This is an easy and healthy snack.
