Eggless Butterless Chocolate cake without Maida | Cake Recipes


Everyone, from adults to kids love chocolate. They will love chocolate cake even better. Chocolate cakes are easy to prepare even without egg. I am presenting a fool proof recipe which I have tried many times with very good result (Cake always spongy). Try this and win the hearts of your loved ones again.

Recipe Cuisine : International | Recipe Category: Baking
Preparation Time: 10 mins  | Baking Time: 25 mins | Yields: 7 inch cake
Ingredients:
Wheat Flour
1 cup (1 cup = 240ml)
Curd / Yogurt
½ cup
Milk
½ cup
Sugar
¾ cup
Coco Powder
¼ cup
Oil (odorless)
¼ cup
Vanilla Essence
1 tsp
Baking Powder
1 tsp
Baking Soda
¼ tsp
Butter / Oil (for Greasing the pan)
As required
Powdered Sugar (for dusting)
As required
Cherries (optional)
As required

Procedure:
1. In a bowl, add milk, curd and sugar. Mix them well till the sugar dissolves completely.
2. Add baking soda with the above mixture and mix them gently. Keep it aside for 5 mins or till bubbles comes from the mixture.
3. Sieve wheat flour, coco powder and baking powder together for 2-3 times. Keep it aside.
4. Meanwhile, grease the baking pan with butter and dust with wheat flour. Keep it aside.
5. Add vanilla essence with the curd mixture (from 2).
6. Now add the sieved flour (from 3) little by little with the curd mixture (from 2).
7. Mix them well and then add remaining flour till all the sieved flour incorporate with the curd mixture.
8. Add oil and fold them gently. Cake batter is ready.
9. Pour the cake batter into the greased baking tray (I have used 7 inch round cake pan).
10. Pre heat the oven for 200 degree Celsius.
11.  Bake the cake at 180 degree Celsius for 25-30 mins or inserted the tooth pick comes out clean.
12. After, immediately take the cake out from the oven. Allow it to cool down completely.
13. Remove the cake from the pan using the knife.
14. Dust the cake with powdered sugar and serve. (this is optional)

   Really spongy and delicious eggless butter less chocolate cake is ready to serve.

Note:

1. Use 1 cup of buttermilk instead of milk and curd.

Eggless Zebra Cake (with Whole Wheat Flour)

Zebra Cake is a mixture of both vanilla sponge cake and chocolate cake. The Zebra’s skin like pattern make it very attractive and tempting for both kids and adults alike. Since the pattern itself pleasing, you don’t need additional cream to decorate.

Ingredients:
Dry Ingredients:

Whole Wheat Flour
1 1/4 cup
Corn Flour
¼ cup
Powdered Sugar
1 ½ cup
Baking Powder
1 ½ tsp
Baking Soda
½ tsp
Coco Powder
2 tbsp
Salt
¼ tsp
Wet Ingredients:

Milk
1 cup
Oil
½ cup
Vinegar
1 tbsp
Vanilla Essence
2 tsp
Luke Warm Water
2 tbsp



Tools Needed:
Small Bowl
2
Large Bowl
2
Balloon Whisk
1
Spoon
2
Ladle ( 2-3 tbsp measure)
1
9 inch cake pan
1
Flour Sieve
1


Procedure:
1. Add vinegar with milk and keep it aside. Do not mix them. Leave it for 5 mins.
2. Add coco powder with luke warm water; mix them well and make a smooth paste without lumps. Keep it aside.
3. Sieve wheat flour, corn flour, baking powder and baking soda together for 3 times. Keep it aside.
4. After 5 mins, the milk becomes curdle. Now mix them well with balloon whisk.
5.  Add this curd mixture in a wide bowl. Then add the powdered sugar and salt; mix them well with whisk for 1 min.
6. Now add sieved flour (from 3) 3 tbsp at a time and mix them immediately without lumps. Do this step till all the wheat flour is mixed.
7.  Then add vanilla essence and oil. Mix them gently till the oil mixes with the batter completely.
8. Now divide this batter into two equal parts.
9. Add the coco paste (from 2) with one part of the batter. Mix them well till the coco paste completely mix with the batter.
10. Meanwhile, grease the 9 inch cake pan with oil and dust with flour.
11. First pour 2 tbsp of white (plain) batter at the center of the greased cake pan.
12. Then pour 2 tbsp of coco mixed batter (from 9) on the center of the plain batter. Do not shake the pan, the batter will spread by itself.
13.  Again pour 2 tbsp of plain batter on the center of the coco batter. Do the steps 11-13 till the end of the batter.
14. Preheat the oven for 200 degree Celsius.
15. Bake the cake at 180 degree Celsius for 35- 45 mins or the inserted tooth pick comes out clean.
16. Allow it to cool down completely and take it out from the pan. Again cool it over the wire rack.
17. Then cut them into small pieces and enjoy with hot Masala Tea.

Note:
1.  You can get powdered sugar by grinding 1 ¼ cup of granulated sugar using dry mixie jar.
2. You can use 1 cup of curd instead of milk and vinegar.
3. You can pour even ¼ cup of batter at a time. But with this measurement you will get more number of lines.

Eggless 2 mins Microwave Vanilla Mug Cake / Vanilla Cake in a Mug

     Lot of times, kids would be pestering for a cake. Cake in a mug is a ideal recipe for these times. The best thing about this recipe is you need just a oven with microwave only. This recipe also came in The Hindu – Young World – summer special magazine last month.

Preparation Time: 1 min  | Cooking Time: 2 mins | Serves: 1

Ingredients:
Maida
¼ cup
Icing Sugar
3 tbsp
Baking Powder
¼ tsp
Salt
a pinch
Choco Chops
10 nos.
Boiled Cold Milk
3 tbsp
Oil
2 tbsp (odorless cooking oil)
Vanilla Essence
¼ tsp

Procedure:
1.  Add maida, icing sugar, baking powder and salt. Mix them well with wire whisk or fork.
2. Then add milk, oil and vanilla essence. Again mix them well with wire whisk.
3. Pour this mixture in a microwave safe mug.
4. Sprinkle choco chips on the top of the mixture.
5. Microwave in high power for 1-2 mins or until a tooth pick when inserted comes out clean.

  Easy and yummy cake is ready to eat!!!
