There are many
Recipes for Eggless Sponge Cake which I have seen on the blog community.
I have started to try
cake recipes only recently. I have tried
this recipe many times and has come out well. I am posting this now as part of
exploration of the cake recipes.
Ingredients:
Maida

1 ¼ cup
|
Curd
|
1 cup
|
Sugar
|
¾ cup
|
Corn Flour
|
¼ Cup
|
Oil
|
¼ cup
|
Baking Powder
|
1 ½ tesp
|
Baking Soda
|
½ tesp
|
Vanilla Essence
|
1 tesp
|
Tutti Fruity
|
2 tbsp(optional)
|
Procedure:
1.
Preheat the oven at 2000C for 10 mins. Grease the baking tray with
oil and flour, tap to remove the excess flour. Keep it aside.
2. Mix the tutti
fruity with 1 tbsp of maida and keep it aside. This will avoid the fruits
getting deposited at the bottom of the cake.
3. Sieve the maida and corn flour with baking powder and baking soda for 2-3 times.
3. In a bowl add curd
and sugar, mix them well with beater. ( I powdered the sugar).
4. Then add oil, vanilla essence and
sieved mixture. Mix them gently until you get creamy batter without lumps.
5. Now add the tutti
fruity and mix them well.
6. Then pour the
batter in the greased tray and bake it at 180oC for 35-45 mins or
until a toothpick comes out clean when inserted
7. Remove the tray
from the oven and cool it completely. Remove the cake from the try and slice it
as per your wish.
Yummy eggless vanilla sponge cake is ready.
The same cake with butter cream frosting.
