Ugandan Rolex / Chapathi Egg Roll Recipe




Ugandan Rolex is a famous street food. This is nothing but Chappathi egg roll; The goodness of Ugandan Rolex is that just one Rolex is good enough for one person’s breakfast. It can be also a good children lunchbox recipe and traveling time snack. It is also a healthy and balanced diet food, because it contains vegetables, eggs and wheat.

Preparation Time: 10 mins  | Cooking Time: 10 mins | Yields: 1 Rolex

Ingredients:
Finely chopped onion
2 tbsp
Finely chopped Cabbage
2 tbsp
Finely Chopped Capsicum
2 tbsp
Finely Chopped Tomato
1 tbsp
Grated Carrot
2 tbsp
Finely Chopped Coriander Leaves
1 tbsp
Finely Chopped Green Chillies
1 tbsp or required
Pepper Powder
1 tsp
Salt
1 tsp or required
Egg
2
For Chapathi:

Wheat Flour
¼ cup
Water
As required
Salt
¼ tsp
Oil
For making rolex


Procedure:
Making dough:
1. In a bowl, add wheat flour, salt and oil. Mix them well.
2. Then add water little by little and knead it into a soft dough. Keep it aside for 10 mins.
3. Then take big size ball from the dough and roll into thin chapathi with 9 inch diameter or required. Keep it aside.
Making Egg Roll:
4. In a wide bowl, add chopped onion, cabbage, tomato, capsicum, coriander leaves, green chillies, grated carrot, pepper powder and salt.
5. Add 2 tbsp water and mix them well.
6. Add eggs and neat them well for 2 mins. Keep it aside.
Making Rolex:
7. Heat the tawa and transfer the chapathi into tawa. Cook both sides for just 30 seconds in each side. Take it out from the tawa and keep it aside.
8. Now pour the egg mixture ( from 6) and spread them into circle with 8 inch diameter.
9. Pour oil around the egg omelet. Keep the flame in medium.
10. After a min, place the chapathi over the omelet (uncooked side) and press them gently with the ladle. (see the video for making rolex)
11. Then turn over the omelet carefully and cook till the both sides black spots starts.

   Yummy, tasty and easy egg chapathi roll / Ugandan Rolex is ready to serve.
Serve with tomato ketchup.

Note:
1. Veggies are your choice.
2. Add red chilli powder instead of green chillies.

Palak Paratha | Easy Paratha Recipes


This is the best way to introduce greens to the kids. This Palak Paratha is colorful and healthy too.

Preparation Time: 15 mins  | Cooking Time: 10 mins | Yields: 5-7 parathas

Ingredients:
Wheat Flour
1 cup
Salt
As Required
For Palak Paste:

Oil
1 tsp
Finely Chopped Palak
2 cups
Finely Chopped Coriander
½ cup
Ginger
½ inch
Garlic Pods
5
Green Chilli
1 or 2
Turmeric Powder
½ tsp
For Making Paratha:

Oil
As required

Procedure:
Preparation Procedure:
1. Wash and drain the water from the palak and coriander leaves. Then chop them into fine pieces.
2. Remove the skin of the ginger and chop it into small chunks,
3. Remove the skin of the garlic and chop them into small pieces.
Cooking Procedure:
4. Heat the oil in a pan, add ginger, garlic and green chilies (split it into two halves). Fry till they become translucent.
5. Add chopped palak and fry till the quantity of the palak becomes half.
6. Add chopped coriander leaves and turmeric powder. Sauté for few seconds.
7. Allow this mixture into cool down completely.
8. Grind the palak mixture with little water into a fine paste using the mixi jar.
9. In a wide bowl, add wheat flour and salt. Mix them well.
10. Add palak paste and add water little by little, knead into a soft the dough. Keep it aside for 10 mins. [Wash the mixi jar and use that water also for making dough]
Making Parathas:
11. Now divide the dough  into a lemon size balls.
12. Now dust the dough ball and roll it into a small circle.
13.  Heat the tawa and transfer the palak paratha, sprinkle the oil and cook both sides till the black spots starts.
       
      Really healthy, colorful and tasty Palak Paratha ready to serve. Serve it with Spicy Chutney.

Note:

1.  Adjust the chilli level according to your taste.
2. Adjust the palak level as per your wish.

Carrot Paratha | Kids Lunch Box Series



     Carrot paratha is a easy kids lunch box recipe. As it has only few readily available ingredients. Carrot adds a sweetish tinge to the chapathi which the kids will love. It is healthy is a bonus.

Preparation Time: 5 mins  | Cooking Time: 15 mins | Yields: 5 nos.

Ingredients:
For Dough:

Wheat Flour
1 cup
Salt
As required
Oil
2 tsp
Water
As required
Oil
For making paratha
For Stuffing:

Grated Carrot
1 cup
Finely Chopped Onion
¼ cup
Red Chilli Powder
½ tsp
Salt
Required
To Temper the Stuffing:

Oil
1 tsp
Cumin Seeds
1 tsp
To Garnish:

Finely Chopped Coriander Leaves
(optional)
1 tbsp

Procedure:
Making dough:
1. In a bowl, add wheat flour, salt and oil. Mix them well.
2. Then add water little by little and knead it into a soft dough. Keep it aside for 10 mins.
Making Stuffing:
3. Heat the oil in a pan, add cumin seeds and wait for splutter.
4. Then add the chopped onion and sauté till they become translucent.
5. Now add the grated carrot, red chilli powder and salt. Sauté till the raw smell of the carrot goes off and it becomes tender.
6. Add finely chopped coriander leaves (if used). Mix them well. Allow it  to cool down completely.
Making Parathas:
7. Now divide the dough (from 2) into a lemon size balls.
8. Now dust the dough ball and roll it into a small circle. Keep 2 tbsp or required amount of stuffing in its center. Then bring the edges to the center.
9. Again dust the stuffed balls and roll it carefully.
 10. Heat the tawa and transfer the paratha, sprinkle the oil and cook both sides till the black spots starts.

       Really easy and tasty paratha ready to serve. Serve it with raitha.

Mango Sweet Paratha

     My kid likes Chapathi dishes very well. So I have been experiments with different type of chapathis/paratha recipes. Recently we bough lot of naturally ripened mangoes from Uzhavar Santhai (farmers market) in my native place. I wanted to try a different recipes with these mangoes.  
     Mango Sweet Paratha was one of those recipes which became very big hit not only with my family but my neighbors also.
     Don’t  miss trying this recipe because kids really will love this.

Recipe Cuisine : South Indian | Recipe Category: Breakfast
Preparation Time: 10 mins  | Cooking Time: 5 mins | Yields: 7 (appx.)

Ingredients:
Ripe Mango
2
Wheat Flour
As Required
Sugar
1 tbsp
Salt
A pinch
Oil
For make parathas

Procedure:
1. Remove the skin of the ripe mangoes. Scoop out the pulp from mangoes.
2. Grind them into a fine paste using the mixie jar.
3. Then add the sugar and salt. Again grind it into a fine paste.
4. Transfer the paste into a bowl.
5. Now add the wheat flour little by little and knead it into soft and pliable dough. No need to add water to knead the dough.
6. Leave it for 10 mins. Make lemon size balls from the dough. Roll the balls into thin circles using the rolling pin. Use wheat flour for dusting.
7. Heat the tawa and transfer the paratha (rolled circles), sprinkle the oil and cook both sides till the black spots starts.
                                      Tasty and aromatic paratha is ready.
