Ground Nut / Peanut / Verkkadalai Chutney without Coconut


     I have already posted ground nut chutney. That chutney used coconut as an ingredient. In this recipe, I am preparing the chutney without coconut. The benefit is different taste and more easy to prepare. This variant is famous in my village side as well.

Preparation Time: 5 mins  | Cooking Time: 2 mins | Yields: 1 cup

Ingredients:
Roasted and De-skinned Ground Nut
1 cup
Chopped Onion
½ cup
Chopped Tomato
1/4 cup
Garlic Pods
4
Tamarind
Turkey Berry Size
Red Chilli
3-4
Jaggery
Small gooseberry size
Salt
As required
Oil
2 tsp
To Temper:

Oil
1 tsp
Mustard Seeds
½ tsp
Curry Leaves
1 spring

Procedure:
1. Heat the oil in a pan. Add chopped onion and sauté till they become translucent.
2. Then add red chillies, garlic pods and salt. Sauté for few seconds.
3. Now add the chopped tomato and fry till they become mushy. Allow it to cool down completely.
4. Grind this above mixture with ground nut, jaggery and tamarind into find paste using little water.
5. Transfer the ground mixture into the serving bowl.
6. Heat 1 tsp of oil in a pan, add mustard seeds and wait for popping. Then add curry leaves and fry till they become crisp.
7. Mix this temper with ground chutney. Yummy and tasty ground nut chutney without coconut is ready to serve.

Note:
1. Sambar onion gives more flavor and taste than big onion.
2. Adjust the chilli level according to your taste.

Peanut Laddoo / Nilakkadalai Urundai / Groundnut Laddu

       Peanut laddu is a quick 5 mins and 2 ingredients only recipe. Peanut is a ingredient which is available in all kitchens most of the time. The other ingredient is Jaggery whish is also readily available. Peanut laddu is a evergreen recipe liked by all including elderly and kids.

Preparation Time: 5 mins  | Yields: 20 nos.

Ingredients:
Roasted and de-skinned peanuts
1 cup
Grated Jaggery
1/3 cup
Cardamom
2

Procedure:
1. Coarsely powder the peanuts using the dry mixie jar. Just pulse them for 3-4 times.
2. Then add the grated jaggery and cardamom.
3. Again pulse them for 4-5 times or till the mixture becomes thick and soft. You should not make it into a fine paste.
4. Transfer this mixture into the bowl, immediately make gooseberry size balls from the mixture.

        Yummy, tasty and healthy ladoo is ready within 5 mins.

Homemade Peanut Butter



      Peanut butter is a very useful add-on for chapathies, breads, dosas etc., It is also an ingredient for cookies.
     It is very costly if you buy off-the-shelf. But it is very easy to prepare within 5 mins. You can help you save ¾ of the cost of the off-the-shelf product.

Ingredients:
Roasted Peanuts
1 cup
Peanut Oil / Olive Oil / Cooking Oil
1 tbsp
Sugar or Honey
1 tesp
Salt (optional)
A pinch
1 cup = 200 ml
Procedure:
1. Powder the peanuts using the mixer. This takes few seconds only.
2. Then add the sugar or honey, and process them again till it becomes thick paste.
3. Now scrap the down the sides of the mixer and add oil.
4. Again process till you can get soft, smooth and paste like consistency.
   Now you can get yummy and tasty homemade peanut butter.
Note:
1. You should use well roasted and de-skinned peanuts.
2. Use this for 15 days even without keeping in  fridge. You can also store it in a fridge use for longer time.
