Groundnut Laddu / Nilakkadalai Urundai / Verkkadalai Ladoo without Ghee

     

There will be times when your family would ask you to prepare a sweet and you have the energy only to prepare a sweet with very few easy steps. Well Groundnut Laddu is a recipe which can come handy exactly in those situations.. you don't even have to have ghee with you to prepare this. Still the Laddo will be very taste and will be liked by all including kids. Try this and you will love it enough to make this many many times.

Preparation Time: 5 mins  | Yields: 10 Laddus

Ingredients:
Roasted and de skinned groundnut
1 cup
Idiyappam Flour / Rice Flour
¼ cup
Grated or Powdered Jaggery
¾  cup
Cardamom Powder
½ tsp

Procedure:
1. Powder the groundnut using the dry mixie jar.
2. Add the rice flour and cardamom powder. Again grind them into a find powder.
3. Now add the grated jaggery and grind them for few seconds.
4. Transfer the mixture into the wide bowl. Immediately make gooseberry size balls from the ground mixture.
        Tasty and easy peanut laddu is ready within 5 mins.

Note:

1. Adjust the jaggery level up to 1 cup according to your taste.

Ground Nut / Peanut / Verkkadalai Chutney without Coconut


     I have already posted ground nut chutney. That chutney used coconut as an ingredient. In this recipe, I am preparing the chutney without coconut. The benefit is different taste and more easy to prepare. This variant is famous in my village side as well.

Recipe Cuisine : South Indian | Recipe Category: Chutney
Preparation Time: 5 mins  | Cooking Time: 2 mins | Yields: 1 cup

Ingredients:
Roasted and De-skinned Ground Nut
1 cup
Chopped Onion
½ cup
Chopped Tomato
1/4 cup
Garlic Pods
4
Tamarind
Turkey Berry Size
Red Chilli
3-4
Jaggery
Small gooseberry size
Salt
As required
Oil
2 tsp
To Temper:

Oil
1 tsp
Mustard Seeds
½ tsp
Curry Leaves
1 spring

Procedure:
1. Heat the oil in a pan. Add chopped onion and sauté till they become translucent.
2. Then add red chillies, garlic pods and salt. Sauté for few seconds.
3. Now add the chopped tomato and fry till they become mushy. Allow it to cool down completely.
4. Grind this above mixture with ground nut, jaggery and tamarind into find paste using little water.
5. Transfer the ground mixture into the serving bowl.
6. Heat 1 tsp of oil in a pan, add mustard seeds and wait for popping. Then add curry leaves and fry till they become crisp.
7. Mix this temper with ground chutney. Yummy and tasty ground nut chutney without coconut is ready to serve.

Note:
1. Sambar onion gives more flavor and taste than big onion.
2. Adjust the chilli level according to your taste.

3 mins 3 ingredients Energy Balls




     This recipe procedure is very simple and fast grinding and mixing of the three ingredients - Peanut, Dates and Jaggery which can be done in 3 minutes. Mixing
of Peanuts and Dates makes it  very healthy and energetic. Peanut is a good low cost alternative for Badam. Kids do not have more than one or two dates at a time. This Energy Ladoo helps them have more.

Preparation Time: 1 ½  mins  | Cooking Time: 1 ½  mins | Yields: 12 (gooseberry size)

Ingredients:
Roasted De-skinned Peanuts / Ground nuts
½ cup
Deseeded and Chopped Dates
¼ cup
Grated Jaggery
2 tbsp
Cardamom Pods (optional)
2

Procedure:
1. Add peanuts, cardamom pods and dates in a dry mixie jar. Ground them into a coarse powder.
2. Then add the grated jaggery and again powder them into a little bit coarse powder.
3. Immediately transfer the powder into a plate or bowl.
4. Make gooseberry size balls from the powder.

    Healthy and yummy Dates Peanut Laddu is ready!!!

Note:
1. Make laddu immediately after transferring the mixie it into a plate. If you delay, the mix will get dry.

Masala Peanut / Kara Kadalai / Spicy Groundnut

     Yet another easy traditional snack for the festival season. Everyone will just love it. Do it yourself instead of buying it from the shops for health reasons.





Recipe Cuisine : South Indian | Recipe Category: Snacks
Preparation Time: 5 mins  | Cooking Time: 10 mins | Yields: 1 1/4 cup

Ingredients:
Roasted Groundnuts
1 cup
Besan Flour / Kadalai Maavu
¼ cup
Rice Flour
¼ cup
Red Chilli Powder
1 tsp
Turmeric Powder
¼ tsp
Salt
As required
Water
6 tbsp or required
Oil
For deep fry
Curry leaves (optional)
1 spring

Procedure:
1.  Add besan flour, rice flour, red chilli powder, turmeric powder and salt together in a wide bowl. Mix them well.
2. Then add the roasted ground nuts and mix them well.
3. Add water little by little and make the mixture thick.
4. Heat the oil in a deep frying pan, till it becomes hot or put a piece of peanut into the oil. If the peanut comes up immediately, then this is the correct stage of oil heating.
5. Then sprinkle the peanuts over the hot oil. Separate the peanuts using the ladle. Turn over the peanuts occasionally using the ladle to cook evenly.
6. Cook them till the bubbles stops completely. Then take them out from the oil using the ladle.
7. Drain the excess oil using the tissue paper. Repeat the process for remaining peanuts. Then cool down completely and store it in an air tight container.
8. If you have used curry leaves, deep fry the leaves and mix with the peanuts.
      Really healthy and tasty snack is ready!!!

Note:
1. You can add hing, garlic, fennel seeds for extra flavor.
2. Do not over load the oil.
3. Adjust the water level according to your flour texture.
4. Do not add more water otherwise peanuts will absorb more oil.
5. Throughout the process keep the flame at medium.
6. You can use skinned, un skinned or partially skinned peanuts.
7. If you find it difficult to separate the peanuts while cooking, you can do it after the frying also.

Peanut / Ground Nut / Veerk kadalai Sundal

     Normally we boil ground net and eat without further preparation. Try converting it into Sundal; It is really good and a good choice for Navaratri.

Preparation Time: 2 mins  | Cooking Time: 5 mins | Yields: ¾ cup

Ingredients:
Raw Peanuts
½ cup
To Temper:

Sesame Oil or Cooking Oil
1 tsp
Mustard Seeds
¼ tsp
Curry Leaves
4 pieces
½ tsp
Asafoedita / Hing
¼ tsp
Salt
As required
To Garnish:

Grated Coconut
2 tbsp

Procedure:
1. Wash and soak the raw peanuts with enough water for 3-4 hours.
2. Pressure cook the peanuts with soaked water and pinch of salt for 3 whistles in medium flame or till they become tender.
3. After pressure has gone, open the lid of the cooker and then drain the water from the peanut using the strainer.
4. Heat the oil in a pan, add mustard seeds and wait for popping, then add the curry leaves for sauté till they become crisp.
5. Now add the red chilli powder, hing and salt; Sauté them for few seconds.
6. Then add the grounts (from 3) and mix them well. Then close the lid of the pan and cook for 2 mins.
7. Add the grated coconut and mix them gently. Then transfer it into serving bowl.

  Serve it immediately with hot herbal chai.

Peanut Laddoo / Nilakkadalai Urundai / Groundnut Laddu

       Peanut laddu is a quick 5 mins and 2 ingredients only recipe. Peanut is a ingredient which is available in all kitchens most of the time. The other ingredient is Jaggery whish is also readily available. Peanut laddu is a evergreen recipe liked by all including elderly and kids.

Ingredients:
Roasted and de-skinned peanuts
1 cup
Grated Jaggery
1/3 cup
Cardamom

Procedure:
1. Coarsely powder the peanuts using the dry mixie jar. Just pulse them for 3-4 times.
2. Then add the grated jaggery and cardamom.
3. Again pulse them for 4-5 times or till the mixture becomes thick and soft. You should not make it into a fine paste.
4. Transfer this mixture into the bowl, immediately make gooseberry size balls from the mixture.

        Yummy, tasty and healthy ladoo is ready within 5 mins.

Jowar / Sorghum / White Cholam Flour - Peanut Cookies

     I have been trying different varieties of biscuits which are tasty and also healthy.  In this recipe, I have tried Jowar millet and Peanut both of which are good for health. Both are also very soft as well. Another good aspect of this cookies is that it is totally gluten free.
     The Biscuits came out well and was liked by my family.

Recipe Cuisine: Indian | Recipe Category:  Baking
Preparation Time: 10  mins | Cooking time: 12 mins | Yields : 25-30 cookies

Ingredients:
Jowar / Sorghum / White Cholam Flour
1 cup (250 ml)
Roasted Peanut
½ cup
Powdered Sugar
½ cup
Butter / Dalda / Fat
½ cup
Custard Powder (vanilla flavor)
1 tbsp
Salt
A pinch

Procedure:
1. Sieve the Jowar flour and custard powder together for 2 times. Keep it aside.
2. Coarsely powder the (80%) peanut without skin using the dry mixie. Just pulse 3-4 times only.
3. Preheat the oven for 200 degree Celsius for 10 mins.
4. Cream the butter / dalda / fat using the electric beater or with your fingers till it becomes fluffy and soft.
5.  Add the powdered sugar and salt with the creamed fat. Again beat till this mixture becomes soft.
6. Now add the flour mixture (from 1 ) and peanut powder (from 2). Mix them well and knead it into a soft and pliable dough.
7. Then roll the dough into ¼ inch thickness using the rolling pin on the flat surface like table top or rolling board.
8. Then cut the rolled dough into your desired shape using the cookie cutter or bottle cap.
9. Now arrange them on the baking tray and bake it for 12 mins at 180 degree Celsius. No need to grease the baking tray.
10. Allow it to cool down and store it in a air tight continer.
     Enjoy this gluten free and tasty cookies with tea.

Note:
1. I used dalda/vanaspathi, but you can use buter also.
2. Custard powder is optional.
3. No need to add milk or water to make a dough.
