Brinjal Tomato Sabji / Kaththarikkai Kothsu



Ingredients:
Brinjal
4
Tomato
2
Green Chilly
4
Turmeric Powder
¼ tes
Tamarind
Gooseberry size
Oil
2 tbs
Mustard Seeds
¼ tes
Channa Dal
½ tbs
Asafoedita
¼ tes
Curry Leaves
1 spring
Sambar Onion
20
Jaggery
1 tbs
Salt
To Taste
Coriander Leaves
For Garnish

Procedure:
1. Heat 1 tbs of oil in a cooker, add green chillies (cut them into two halves), Chopped brinjal, turmeric powder, tamarind juice and little water.
2. Pressure cook for 2 whistles in a medium flame.
3. After pressure has gone, mash them well and keep it aside.
4. Heat the remaining oil in a pan, add mustard seeds and allow it for splitter.
5. Then add channa dal, curry leaves, Asafoedita and finely chopped onion. Fry till the onion becomes golden color.
6. Now add the chopped tomatoes and fry till they becomes mushy.
7. Then add then mashed mixture, jaggery, salt and little water. Allow it to boil. Garnish with coriander leaves.
    Katharikkai kothsu is ready to eat. It goes well with Pongal, Idly and Dosas.
