Ingredients:
Pearl Millet / Kambu

Leaves

1 tesp per dosa

Procedure:
1. Wash
and soak the pearl millets for 5 hours.
2. Wash
and soak the thur dal, split gram dal and ural dal together for 2 hours.
3. Soak
the split green gram / moong dal for ½ an hour separately.
4.
Grind the pearl millets with red chillies, aniseeds, curry leaves and ginger
coarsely.
5. Then
grind the dals coarsely with tomato, asafoetida and salt.
6. Now
add the split green gram, and salt.
Grind this mixture for just 2 sec only.
7. Now
mix both the millet batter and the dal batter together. Pearl millet/ kambu adai
dosa batter is ready.
8.
Before making adai, add chopped coriander leaves to the batter.
9. Heat the tawa and pour one ladle full of batter into a thick
circular shape.
10. Pour few drops of oil
along the sides of the dosa. Turn over once it reaches golden colour.
11. Remove the dosa when it is golden on both
sides.
Serve
hot with onion chutney.
