Egg Appam / Muttai Aappam | Appam Recipes


I have already posted many varieties of Appam like Palak Appam,Beetroot Appam, Mudakkaththan Appam, etc. Egg Appam is one more variety but is a good one to have when you want to serve an assorted varieties of Appam.

Recipe Cuisine : South Indian | Recipe Category: Breakfast
Preparation Time: 5 mins  | Cooking Time: 5 mins | Yields: 2-3 Aappam

Ingredients:
Appam Batter

¼ cup
Egg
1
Pepper Powder
½ tsp
Salt
¼ tsp
Water
2 tsp

Procedure:
1.  In a bowl add 2 tsps of water, pepper powder and salt. Mix them well.
2. Then break the egg and pour it into the above mixture. Mix them well.
3. Now add the appam batter and mix well with wire whisk without lumps. Egg Aappam / Muttai Appam batter is ready.
4.  Heat the appam pan and pour few drops of oil. Then pour ladle full of batter into the pan. Now rotate the pan in a circular motion, so that the batter spreads all over the pan. See this video for how to make aappam.


5. Now pour few drops of oil and close the lid of the pan. Cook for 2-3 mins or till the appam is cooked well.
6. Then take it out from the pan and serve with spicy chutney.

    Tasty and mouthwatering appam is ready!

Beetroot Aappam | Aappam Recipes

     I have been trying to make different varieties of appam such as Palak appam. This beet root aappam is in continuation with this approach. The pink color looks very attractive and the taste is also nice.



Recipe Cuisine: South Indian | Recipe Category:  Breakfast
Preparation Time: 15  mins | Cooking time: 15 mins | Yields : 5-7 appams

Ingredients:
Beetroot (medium size)
1
Sugar
1 tbsp
Aappam Batter (click here for the batter recipe)
1 cup
Oil
For making appam
1 cup =  250 ml
Procedure:
1. Wash and remove the skin of the beetroot and cut it into big chunks.
2. Pressure cook them with little (1/4 cup) water for 4 whistles in medium flame or till it becomes tender.
3. Allow it to cool down and grind them into a fine paste using the cooked water in a mixie.
4. Strain the beetroot juice from the paste.
5. Mix this juice with aappam batter.
6. Add sugar with appam batter and mix them well. Keep it aside for 5 mins.  Beetroot aappam batter is ready.
7. Heat the aappam pan and pour few drops of oil. Then pour a ladle full of batter into the pan. Now rotate the pan in a circular motion, sothat the batter spreads all over the pan. See this video for how to make aappam.
8. Now pour few drops of oil and close the lid of the pan. Cook for 3 mins or till the appam is cooked well.
9. Then take it out from the pan and serve.
      This goes well with coconut milk or coconutchutney.

Palak Appam

     Many people do not like to take greens/keerais. For them palak appam is a good option with palak aappam you get nice green color and also no difference from normal white aappam. Kids also will love it for the color.

Preparation Time:  5 mins  | Cooking Time: 5 mins| Yields: 5 nos

Ingredients:
Aapam Batter (click here for the recipe)
1 cup
Palak Leaves
½ bunch or 5-7 leaves
Green Chilli
1
Salt
To taste
Oil
For make aappam

Procedure:
1. Heat one cup of water in a wide bowl. Bring it to boil and add the green chilli.
2. Then switch off the flame and put the washed palak leaves into the hot water. Remove the stem if the stems are very strong, otherwise use the stem also.
3.  Leave it for 2 mins and remove it from the water and strain it completely.
4. Grind them into a fine paste using mixer grinder with little water .
5. Now mix this palak paste with aappam batter. Mix them well and keep it aside for 5 – 10 mins.
6. Heat the aappam pan and pour few drops of oil. Then pour 2 ladle full of batter into the pan. Now rotate the pan in a circular motion, so that the batter spreads all over the pan. See the video for how to make the aappam.



7. Now pour few drops of oil and close the lid of the pan. Cook for 2-3 mins.
8. Then take it out from the pan and serve it hot with Tomato chutney.

Flower Shape Aappam

     In my experience kids like dosas or appams in different shapes. Flower shape aappam is the most simple shape you can create without any special effects.

Preparation Time: 5 mins  | Cooking Time: 5 mins | Yields: 1 no.
 Ingredients:
As required
Oil
For Making Aappam
 Procedure:
1. Heat the aappam pan and pour few drops of oil. Then pour 1 ½ (1/2 cup) ladle full of batter into the pan.
2. First lower the top side(1), then lower the bottom side(2), lower left side(3), lower the right side(4), now lower the pan to fill the  remaining gaps between the four petals. So that the batter spreads like a flower.
3. Now pour few drops of oil and close the lid of the pan. Cook for 2-3 mins.
4. Then take it out from the pan and serve it hot with coconut milk or chutney.
Note:
1. You should not turn over the aappam.
