Fresh Fig Jam / Athipazha Jam

I have been exploring Fig based Juices only so far. Fig can also used to prepare jams which will go well with Bread and Chapattis. Kids and Adults who are not keen to take Fig as fruit or juice will definitely like this.

Recipe Cuisine : International | Recipe Category: Jam
Preparation Time: 10 mins  | Cooking Time: 25 mins | Yields:  1 ¼ cup

Ingredients:
Fig  Puree*
2 cups
Sugar
½ cup
Water
2 ½ cup
Lemon Juice
2 tbsp

* You need 15 -20 figs approximately to make 2 cups puree.
Procedure:
1. Wash and peel the skin of the figs.
2. Chop them into small chunks.
3. Grind them into a coarse paste using the mixie. Take 2 cups of this puree.
4. Heat the heavy bottom pan, add the fig paste and water. Mix them well.
5.  Cook till the mixture becomes thick. Mean while, smash the un-grinded figs using the smasher or back side of the ladle.
6. Now add the sugar and mix them well. First the mixture becomes watery and starts to thick.
7. Stir occasionally and cook till the mixture does not stick the walls of the pan. And the bubbles completely stop forming again and again.

8. Transfer the jam to the container and allow it to cool down to room temperature.  You can use 3 days at room temperature or refrigerate and use it for 10 -15 days.

Enjoy with bread, chapathi and dosai also.
