Mixed Vegetable Rice | Easy Lunch Box Recipes

     Simply put, Vegetable rice is Biryani without the Masala; It tastes almost like biryani and is a good lunchbox recipe;
If served with a spicy thokku or egg thokku, the combination will be really good – mouthwatering.

Ingredients:
Rice (Basmathi / Seeraga Samba / Normal Cooking Rice)
1 cup
Chopped Mixed Vegetables (carrot, beans, peas)
1 cup
Mint Leaves
Handful
Coriander Leaves
handful
Ginger Garlic Paste
1 tbsp
Salt
As required
To Temper:

Oil or Ghee or oil+ghee
1 tbsp
Bay Leaf
1
Cinnamon
1 inch
Cardamom
1
Cloves
2
Marati Mokku
1
Star Anise
1
Green Chilli
1 or 2
Onion (medium size)

Procedure:
Preparation Procedure:
1. Remove the skin of the carrot and cut it into small pieces.
2. Cut the head and tail of the beans. Wash and drain the water. Then cut them into small pieces.
3. Wash the peas and drain the water.
4. Remove the skin of the onion and chop them into thin slices.
5. Wash and remove the stem of the green chilli. Cut it into two halves.
6. Wash and drain the water from mint and coriander leaves.
7. Wash and soak the rice with 1 cup of water for 15 mins. After 15 mins, drain the water from the soaked rice using the strainer.
Cooking Procedure:
8. Heat the oil/ghee in a pressure cooker, add whole spices, then add the chopped onion (from 4) and fry till the onion becomes translucent.
9. Then add the green chilli (from 5) and sauté for few seconds.
10. Now add the mixed vegetables (from 1,2 and 3) and sauté for a minute.
11. Then add the ginger garlic paste, mint leaves and coriander leaves. Sauté till the raw smell of the leaves goes off.
12. Now add the drained rice (from 7) and salt. Fry the rice for 1 mins.
13. Add 2 cups of water (use the strained water from 7) and close the lid of the cooker. Put the whistle immediately when the steam comes out from the cooker lid and keep the flame at very low. Cook for 10-12 mins. [ if the whistle does not come, don’t worry about it]
14. After 10 mins switch off the flame. Once pressure has gone, open the cooker and transfer the rice into wide bowl. Mix them gently with the help of fork.
