Pasi Paruppu Payasam / Moong Dhal Kheer

     Paruppu payasam is a easy to make dessert especially for festival occasion. This is not only sweet but also healthy. For Tamils, this Adi season during which this recipe is traditionally prepared and served.

     Muslims celebrate this time as Eid. This year, Eid will be celebrated on the 19th of July and what better way to usher in happiness than with mouth-watering Paruppu payasam  dessert to add happiness to your celebrations.

Ingredients:
Split green gram /
½ cup
Grated Jaggery
½ cup
Grated Coconut
2 tbsp
Cashews

Dry Grapes (optional)

Ghee
1 tbsp
Boiled Milk
1 cup
Cardamom Powder
½ tesp
 Procedure:
1. Dry roast the moong dal till a nice aroma comes out and allow it to cool down.
2. Heat the ghee in a pan and roast the cashew nuts and dry grapes till they become golden brown. Then add the grated coconut and fry for min. Transfer them into plate and allow them to cool down.
3.  Wash and pressure cook the dal  with 1 cup of water for 3 whistles or cook in a heavy bottom pan with lid also.
4. In the meantime, dissolve the jaggery in ½ cup of hot water and strain it using the steel filter.
5.  Now mix the jaggery syrup with cooked dal. Mix them well and bring to boil. Then reduce the flame and cook until it becomes thick.
6. Then add the fried cashews and coconut mixture with cardamom powder. Cook for a min and switch off the flame.
7.   Now add the boiled cold milk (should not add hot milk, this may be curdle) and mix it well.

    Yummy and delicious moong dla payadam/ kheer is ready to serve.

Ridge Gourd Peanut Curry / Peerkankai kadalai curry

     This is traditional, village recipe which is used by mother and grandmother regularly. It goes well with rice and chapathi.




Ingredients:
Ridge Gourd / Peerkankai
½ kg
Onion
2
Tomato
1
Sambar Powder
1 tbsp
Turmeric Powder
¼ tesp
Roasted Peanut
2 tbsp
Salt
To taste
To Temper:

Oil
1 tbsp
Mustard Seeds
½ tesp
Curry Leaves
1 spring
 Procedure:
1. Wash and peel the skin of the ridge gourd. Cut it into small pieces  and keep it aside.
2. Chop the onion into small pieces.
3. Powder the peanut using the mixie.
3. Heat oil in the pressure cooker, add mustard seed and wait for popping. Then add the curry leaves and fry for a min.
4. Now add the chopped onion and saute till it becomes translucent.
5.  Then add the chopped tomato and fry till it becomes mushy.
6. Next add the chopped ridge gourd and fry for min. Then add turmeric powder, sambar powder and salt. Mix them well and add 1 cup of water. Pressure cook for 3-4 whistles in medium flame.
7. Allow it to cool down. After pressure has gone smash well with blender add the powdered peanut and mix them well.

    Ridge gourd peanut curry is ready to serve.

Papaya Orange Jam

     Even though papaya is a very healthy fruit, lot of people have aversion towards it because of its taste. Papaya orange jam is a recipe idea to make people have papaya. The essence of the orange completely dominates papaya and makes it sweet and tasty. My kid and husband finished off the entire preparation in no time, making this a must try recipe.






Ingredients:
Ripe Papaya Puree
 1 cup
Orange  Juice
¼ cup
Sugar
½ cup
Water
1 cup
 Procedure:
1. Remove the skin and seeds of the papaya. Chop it into small pieces. Blend it into puree form using the mixie. Keep it aside.
2. Take the juice from orange and strain it. Keep it aside.
3. Heat a heavy bottomed pan and place the papaya puree and water on it. Mix them well and allow it to cook well.
4. Then add the sugar and orange juice. Mix them well; Keep the flame at medium level.
5. Within a short time you can observe bubbles starting to appear.
6.  Cook till the bubbles stop appearing and the mixture becomes thick.
7. Store it in a clean and dry bottle and use it after the jam has cool down.
Note:You can store and using it for more than 15 days using the refrigerator.

Easy Brinjal / Eggplant / Kathariikai Fry

     The side dish for curd rice should be always spicy. Brinjal is a very good curry to go with curd rice. This brinjal fry recipe is easy to prepare as it has few ingredients and the procedure is also very simple.



Ingredients:
Brinjal
¼ kg
Sambar Powder
1 tbsp
Salt
As required
To Temper

Sesame Oil
1 tbsp
Mustard Seeds
½ tesp
Curry Leaves
1 spring
 Procedure:
1. Wash and cut the brinjals into lengthwise thin pieces.
2. Heat the oil in a heavy bottom pan, add mustard seeds and wait for popping.
3. Add curry leaves and  fry for a minute.
4. Then add the brinjal pieces and mix well with spatula. Then close the pan and cook for 2 mins. (No need to add water)
5. Now add the sambar powder and salt. Mix them well and cook till they become crisp.

    This fry goes well with curd rice.

How to clean Grapes

     Chemicals and pesticides are being used by formers for all fruits and vegetables. We intake them unknowingly even while eating fruits like grapes. My friend Manju brought to my notice the importance of cleaning grapes properly before using to avoid cold.



Ingredients:
Grapes
½ kg
Salt
1 tbsp
Turmeric
½ tesp
Water
As required
 Procedure:
1.  Remove the grapes from the stem and put them in a wide bowl.
2. Add water and wash the grapes. Then drain the water completely.
3. Add water till the grapes immersed in it and then add salt. Shake it gently and keep it aside for 5 mins. After 5 mins, drain the water completely.
4. Again add water till the grapes immersed in the water and then add turmeric. Shake it gently and keep it aside for 5 more mins. After 5 mins, drain the water completely.

5. Again rinse the grapes with pure water and drain it and then use.

Baby Medicinal Hair Oil (for cold)

     Today, we have been accustomed to use allopathic chemical medicines for simple ailments. But there is a growing awareness to avoid them as much as possible. 
     Baby medicinal hair oil is a very good remedy for headaches and cold, especially for babies (adults also).
     In my personal experience, this has been very effective and I highly recommend to everyone to try and benefit.




Ingredients:
Coconut Oil
200 ml
Betel Leaves / Vettrilai

Indian Borange / Karpooravalli

Solanum Trilobatum / Thoothuvalai

Sweet Basil

Holi Basil

Procedure:
1. Wash all the leaves and dry them using a clean cloth.
2. Heat the oil in a vessel, then add all the leaves and mix them well with ladle.
3. Now a sizzle sound starts from the oil because of the water content in the leaves.
4. Heat the oil till the sizzle sound sets off.
5.  Allow it to cool down and strain the oil using the steel filter. Then store it in a air tight container.
       Medicinal baby hair oil is ready to use.

Rose Sweet Lassi | Lassi Recipes

     Hyderabad Heritage Rose lassi is one of my Hubby’s favorite drinks. I tried to prepare it at home itself. We used to make this very frequently while we were in Hyderabad. I am  sharing this simple but excellent staple drink recipe.


 Ingredients:
Curd
1 cup
Milk
¼ cup
Sugar
3 tbsp
Rose Syrup
2 tbsp
Ice Cubes
5-7
 Procedure:
1. Mix all the ingredients together and blend it using the blender or mixie. Just pulse it till they mix thoroughly.
2. Don’t over beat the mixture, because it becomes curdle.
     Serve it chilled.
Note:
Adjust the sugar level according to your taste.
