Mixed Vegetable Bread Sandwich


Making healthy sandwiches is very important because kids like sandwiches and would ask us to prepare them. I keep trying different combinations. This one clicked very well that my family requests to make this again and again.  Also, they cannot guess which vegetables has been used.

Preparation Time: 15 mins  | Cooking Time: 10 mins | Yields: 4-5 sandwiches

Ingredients:
Sandwich Bread Slices

Finely Chopped Onion
½ cup
Grated Carrot
1 cup
Grated Potato (without skin)
1 cup
Finely Chopped Beans
¼ cup
Grated Baby Corn
1 cup
Ginger Garlic Paste
1 tbsp
Tomato
1
Salt
As required
Dry Powders:

1 tsp
1 tbsp
To Temper:

Oil
2 tsp
Cumin Seeds
1 tsp
To Garnish:

Finely Chopped Coriander Leaves (optional)
1 tbsp
For Sandwich:

Bread Slices

Butter or Mayonnaise
4 tsbp

Procedure:
1. Chop the tomatoes into small pieces. Then grind them into fine paste without water using the mixie.
2. Heat the oil in a pan, add cumin seeds and wait for popping.
3. Then add the chopped onion. Sauté till they become translucent.
4. Now add the ginger and garlic paste or grated ginger and garlic. Sauté them till the raw smell goes off.
5. Add the ground tomato paste (from 1) and fry till the raw smell of the tomato goes off.
6. Now add the chopped vegetables (carrot, beans, potato and baby corn) and mix them well.
7. Add little water and close the lid of the pan. Cook them for 2 mins.
8. Then add red chilli powder, coriander power and salt. Mix them well and cook them till they become tender. Add chopped coriander leaves (if used) and mix them well. Now mixed vegetable curry is ready.
9. Now heat the dosa tawa or sandwich tawa, place the bread slices and toast them on both sides.
10. Now apply butter or mayonnaise or butter on one side of the bread. Spread mixed veg curry (from 8) on another bread slice.
11. Now close them carefully and toast it for few more mins. Then cut it diagonally and serve.
    Yummy and tasty mixed vegetable sandwich is ready!

Note:
1. Vegetables are your choice.

2. Mayonnaise gives creamy and yummy taste than butter.

Multi Grain Flour Sponge Dosai


Multi grain sponge dosa is the most easiest recipe using the multi grain flour described earlier. This can be a good variety to the normal rice dosa which you prepared regularly.

Preparation Time: 5 mins  | Cooking Time: 5 mins | Yields: 7 nos

Ingredients:
2 cups
Fermented Idli Batter / Left Over Idli Batter
1 cup
Salt
As required
Water
As required
Oil
For making dosai

Procedure:
1. In a wide bowl, add idli batter, multigrain flour and salt. Mix them well with balloon whisk or ladle.
2. Add water little by little and mix them gently. Add water till you can get dosa batter consistency.
3. Close the lid of the bowl and leave it for ½ an hour to 2 horus. Your multigrain dosa batter will be ready to make dosas after 2 hours.
4. Heat the dosa tawa and pour ladle full of batter. Then spread the batter into thick circle using the backside of the ladle.
5. Pour ½ tsp of oil over the dosa and allow it to cook.
6. Once cooked, then turn over the dosa and cook till it reaches golden color on both sides.
   Healthy and tasty dosa is ready to serve. Serve with tomato or onionchutney.

Note:
1. Add salt for multigrain flour only because the idli batter already have salt.
2. Even though half an hour of soaking is enough for multi grain batter. The more the time you keep the batter, better the dosas sponginess would be.

Multipurpose Multigrain Flour | Easy Homemade Powders


I have already posted Health Mix Powder / Saththu Maavu recipe. With that health mix powder we can make porridge. But in this recipe, which is similar to health mix powder, we can make lot of dishes like Dosa, Roti, Chapathi, Poori etc.,

Once we can make it preserve for it for 6 months. Stay tuned for the recipes with this multi grain flour.

Preparation Time: 45 mins  | Drying Time : 2 days | Yields: 4-5 kgs
Ingredients:
Foxtail Millet / Thinai
1 cup
Finger Millet / Ragi
1 cup
Kodo Millet / Varagu
1 cup
Little Millet / Saamai
1 cup
Barnyard Millet / Kuthiraivali
1 cup
Pearl Millet / Kambu
1 cup
Maapillai Samba Rice
1 cup
Black Rice / Kavuni Arisi
1 cup
Bamboo Rice / Moongil Arisi
2 cups
Horse gram / Kollu
½ cup
Cow Peas / Thattai Payaru
½ cup
Green Gram / Pasip Payaru
½ cup
Whole Wheat
3 -4 cups
Urad Dal
2 - 4 cups

1 cup = any 1 cup measure

Procedure:
1. Wash all the millets together for 2 times and drain the water completely.
2. Wash all the grains and remaining rice together for 2 times and drain the water.
3. Wash uad dal, bamboo rice and whole wheat separately. Then drain the water completely.
4. Then dry the grains under sunlight till they become crisp and without moisture. This process will take 2-3 days. It depends upon the sunlight.
5. Then grind them into a fine powder though flour mill. Allow it to cool down completely and store it in an air tight container for later use.
   Homemade multipurpose multigrain flour is ready!

Note:
1. The ratio of the grains is your choice.
2. The ratio of the grains and the wheat should be 4:1
3. The ratio of the grains and the urad dal should be 4:1 or 3:1.

Rainbow Spiral Cookies – Holi Special Recipes

Recipe Cuisine: International | Recipe Category: Baking
Preparation Time: 15 mins  | Cooking Time: 15 mins | Yields: 10-12 cookies

Ingredients:
Maida
1 cup
Butter
½ cup
1/3 cup
Boiled Cold Milk
2 tbsp
Food Colors (Red, Green, Blue and Yellow)
½ tsp in each colors


Procedure:
1. Beat the butter with electric beater or balloon wire whisk till it becomes fluffy.
2. Then add icing sugar and milk, mix them well. Then beat till it reaches fluffy consistency.
3. Now add the maida little by little and mix them well. Knead it into a soft and pliable dough.
4. Divide the dough into 4 equal parts.
5. Add four colors to four parts of the dough separately. Then mix them well till the colors mix with the dough.
6. Now make gooseberry sized balls from each color dough. Make equal number of balls in each colors.
7. Now take one balls from each of the four colors and make a single ball from these 4 balls gently.
8. Now roll the dough and make 2mm thickness rope.
9. Then make wheels with 4-5 circles from this rope. Make wheels without gap.
10. You can make all the color dough(from 6) into wheels (from 7-9).
11. Arrange the wheels on the baking tray. Keep ½ inch gap between the wheels.
12. Preheat the oven for 180 degree Celsius.
13. Bake the cookies for 10 mins at 170 degree Celsius.  Allow it to cool down and then serve.
    Colorful and yummiest cookies are ready to celebrate Holi!

Note:
1. The individual colors is of your choice.
2. You can use as many colors as you want.
3. The number of circles in the wheels can be as much as you want.

Peanut Butter Sweet Rice - Bouiller –African Sweet Rice Recipe




      Peanut butter is becoming popular now as an alternative to Jam and Cheese for bread toppings. My cousin who lived in Uganda told about a sweet rice using peanut butter. When I was searching for that, I came across this recipe. In that recipe, they mixed peanut butter with cooked rice. I tried mixing peanut butter after cooking and it come out well. This is a good recipe for kids especially.

Ingredients:
Cooked Rice
1 cup
Peanut Butter
3 tbsp
Sugar
2-3 tbsp
Warm Water
1/2 cup

Crushed Peanuts (optional)

1. In a wide bowl, add rice, peanut butter, sugar and water. Mix them well with spatula.
2. Bring them to boil till it turns into thick porridge like consistency.
3. Switch off the flame and transfer it to serving bowl.
4. Sprinkle crushed peanuts and serve.
       Mouthwatering Sweet Peanut Butter Rice – Bouiller is ready.

Note:

1. Adjust the sugar level according to your taste.

Jam Thumb Print Cookies | Easy Cookies Recipes



 To make homemade cookies attractive to kids, jam is a very good topping. Jam’s translucent reddishness makes it very attractive to kids. It is so good that it even attracts adults and makes the cookies disappear fast.

Recipe Cuisine : International | Recipe Category: Baking
Preparation Time: 10 mins  | Cooking Time: 10 mins | Yields: 20 cookies

Ingredients:
Dry Ingredients:

Whole Wheat Flour
1  cup
Icing Sugar
1/3 cup
Wet Ingredients:

Butter / Dalda
½ cup
Boiled Cold Milk
3 tbsp
Jam (any variety)
1/4 cup
Vanilla Essence
1 tsp
Warm Water
2 tsp

1 cup = 240 ml
Procedure:
1. Take the jam in a wide bowl and add 2 tsp of water. Mix them well and keep it aside.
2. Beat the butter with electric beater or wire whisk till it becomes fluffy.
3. Then add icing sugar, milk and vanilla essence; mix them well. Then beat till it reaches fluffy consistency.
4. Now add the flour little by little and mix them well. Knead it into a soft and pliable dough.
5. Wrap this dough with plastic cover and keep it in fridge for 20 mins.
6. After 20 mins, make small gooseberry size balls from the dough.
7. Give thumb impression at the center of the balls. Make sure that the balls do not crack.
8. Pour the jam till ¾ of the depression of the ball.
9. Place the balls on the ungreased tray and leave ½ inch distance between the balls.
10. Meanwhile, preheat the oven at 180 degree Celsius for 10 mins.
11. Then bake the cookies for 10 mins at 170 degree Celsius. Allow it to cool down completely and then serve.
          Delicious and mouthwatering Jam Thumb Print Cookies are ready to serve.

Note:
1. You can use maida instead of wheat flour.
2. Use any jam varities.
