Tomato Pickle / Thakkali Oorukai



Ingredients:
Tomato
1 kg
Gingelly Oil
5 tbs
Mustard Seeds
1 tbs
Curry Leaves
2 spring
Fenugreek  Seeds
1 tes + 1 tbs
Asafoedita
1 tes
Red Chilly Powder
2 tbs
Sambar Powder
1 tbs
Salt
To Taste

Procedure:
1. Dry roast 1 tbs of fenugreek seeds and allow it to cool down. Then Powder it.
2. Wash and chop the tomatoes into small pieces.
3. Grind the tomato pieces into fine paste.
4. Heat the oil in a heavy bottomed pan, add mustard seeds and allow it to pop.
5. Then add curry leaves, 1 tes of fenugreek seeds, and asafoedita powder. Fry them for a minute.
6. Now add the tomato paste, red chilly powder, sambar powder and salt.
7. Mix them well and cook it in a medium flame. Cook till the water evaporates completely and the oil comes out from the pickle.
8. Allow it to cool down and keep it in a air tight container.

Kurinji,the tomato pickle is a keeper,I am so used to pickle with my food,this seems like the healthiest and yummyist chutney to enjoy with almost everything:)
