Egg Kuzhambu / Muttai Kulambu

     Egg kuzhambu is a spicy side dish which goes well with both rice, Idli, Dosa and chapathi. This is one of our regular recipes.

Ingredients:
Hard Boiled Egg

Turmeric Powder
½ tesp
To fry and grind into paste:

Oil
1 tbsp
Small Onion
½ cup
Red Chilli
3
Coriander Seeds
2 tbsp
Cumin Seeds
1 tesp
Pepper
½ tsp
Fennel Seeds
1 tesp
Ginger
½ inch
Garlic Pods
4
Cinnamon
½ inch
Cardamom
1
Cloves
2
Tomato
1
Grated Coconut
¼ cup
To Temper:

Oil
1 tbsp
Mustard Seeds
½ tesp
Curry Leaves
1 spring
Chopped Onion
2 tsbp
Garlic Pods
2
To Garnish:

Chopped Coriander Leaves
1 tbsp

Procedure:
Preparation Procedure:
1.  Remove the shell of the eggs and either cut them into two halves or slit a half cut at 4 places on each of the eggs.
2. Peel the skin of the onions and wash them well. Then chop them into small pieces.
3. Wash and chop the coriander leaves into very fine pieces.
4. Wash and remove the skin of the ginger. Chop it into small pieces.
5. Remove the skin of the garlic and chop them into small pieces.
6. Wash and chop the tomato into small pieces.
Cooking Procedure:
1. Heat one tbsp of oil in a pan, add cinnamon, cloves and cardamom. Saute for few seconds.
2. Then add the red chillies, coriander seeds, cumin seeds, pepper and fennel seeds. Fry till a nice aroma comes out.
3. Now add the chopped onions, chopped ginger and chopped garlic pods. Fry till they turn into translucent.
4. Add the chopped tomatoes and fry till the tomato becomes mushy. Switch off the flame and allow it to cool down.
5. Add the grated coconut and grind them into a fine paste using mixer grinder with little water.
6. Now heat 1 tbsp of oil in a same pan, add mustard seeds and wait for popping.
7. Add the curry leaves, chopped onion and chopped garlic pods. Saute till the onion become translucent.
8. Add the ground paste, turmeric powder, salt and water (wash the mixer grinder with water and use it). Mix them well and allow it to boil till the kuzhambu becomes thick.
9. Finally switch off the flame and add grated coriander leaves. Put the boiled eggs into the kuzhambu directly into the pan or arrange the eggs in a serving bowl and pour the kuzhambu over the eggs.
   Really yummy and mouthwatering egg kuzhambu is ready to use.

Note:
1. You can use boiled potatoes instead of eggs.
