Foxtail Millet and Lentils Adai / Thinai Paruppu Adai | Millet Recipes

     Thinai adai is the best beginner’s millet recipe. The adai will be indistinguishable from normal adai and can be used to make people be open to millet food.



Recipe Cuisine : South Indian | Recipe Category: Breakfast
Preparation Time: 10 mins  | Cooking Time: 5 mins | Yields: 7-9 adais

Ingredients:
Foxtail Millet / Thinai
1 cup
Bengal Gram / Kadalai Paruppu
¼ cup
Thur Dal / Thuvaram paruppu
¼ cup
Urad Dal
2 tbsp
Split green gram / moong dal/pasiparuupu
2 tbsp
Fenugreek seeds
1 tbsp
Red Chilli
2
Salt
As required
Asafoedita / Hing
½ tsp
Chopped Curry Leaves
2 tbsp
Chopped Coriander Leaves
2 tbsp
Grated Coconut
¼ cup
Oil
To make adai

Procedure:
1. Wash and soak the foxtail millet for 3 hours.
2. Wash and soak the dals together for 2 hours.
3. Grind the foxtail millet, red chilli, salt and asafoedita with little water into a coarse paste using the mixie or wet grinder.
4. Then add the dals (drain the water from the dals) and grind them into a coarse paste.
5. Transfer the batter into the bowl, then add the chopped curry leaves, chopped coriander leaves and grated coconut. Mix them well and the adai batter is ready to make adai. ( no need to ferment)
6. Heat the dosa tawa and pour one ladle full of adai batter into a thick circular shape.
7. Pour few drops of oil along the sides of the adai. Turn over once it reaches golden color. Remove from the flame when it reaches golden on both sides.
                        Serve it with MintChutney and Onion Chutney.

Thuvaram Paruppu Adai Recipe / Thur Dal Dosai | Easy Breakfast Ideas



Thuvaram paruppu adai is a interesting variant in my Adai recipe collection. This recipe was suggested by my friend Jesintha. The speciality of this recipe is the addition of carrots to spice it up.

Recipe Cuisine : South Indian| Recipe Category: Breakfast 
Preparation and Soaking Time: 2 hrs mins | Cooking Time: 10 mins | Serves : 3

Ingredients:
Raw Rice
1 cup
Parboiled Idli Rice
1 cup
Thur Dal
½ cup
Urad Dal
¼ cup
Red Chillies
2-3
Aniseeds / Sombu
1 tsp
Salt
As required
Oil
For making dosas
Grated Carrot
1 cup
Finely Chopped Onion
1 cup
Finely Chopped Coriander Leaves
¼ cup

Procedure:
1. Wash and soak the raw rice and parboiled rice together with enough water for 3-4 hrs.
2. Wash and soak thur dal and urad dal together for 3 hrs.
3. Soak the red chillies with littler water for an hour.
4. Grind the soaked rice with soaked chillies with little water into fine paste. (for grinding use rice soaked water and chillies soaked water)
5. Grind the soaked dal with little water, aniseeds and salt into little bit coarse paste.
6. Mix both batter with your hands and leave it for an hour.
7. Before making adai, add chopped onion, chopped carrot and chopped coriander leaves. Mix them well. Adai batter is ready.
8. Heat the dosa tawa, pour ladle full of batter and spread them into a thin circles.
9. Pour oil around the adai and cook till the both sides become golden in color and crisp.
      Yummy and tasty Thur dal Carrot Adai is ready. Serve with coconut chutney or mint chutney or Jaggery.

Note:
1. For soft and crispy adai, you can keep the batter in the refrigerator for 5-6 hours and them make adai.

Pearl Millet / Kambu Adai | Pearl Millet Recipes






Ingredients:
Pearl Millet / Kambu
 1 cup
 Thur Dal
 ¼ cup
 Split Green Gram /Moong Dal
 ¼ cup
 Split Bengal Gram / Channa Dal
 ¼ cup
 Urad Dal
 2 tbs
 Red Chilly
 2
 Curry Leaves
 1 spring
 Aniseeds / Sombu
 1 tbs
 Asafoetida
 ¼ tbs
Ginger
 1 inch
 Chopped Coriander Leaves
 2 tbs
 Tomato
 1 (small)
 Water
 3 cup
 Oil
 1 tesp per dosa
 Salt
 To Taste

Procedure:
1. Wash and soak the pearl millets for 5 hours.
2. Wash and soak the thur dal, split gram dal and ural dal together for 2 hours.
3. Soak the split green gram / moong dal for ½ an hour separately.
4. Grind the pearl millets with red chillies, aniseeds, curry leaves and ginger coarsely.
5. Then grind the dals coarsely with tomato, asafoetida and salt.
6. Now add the split green gram,  and salt. Grind this mixture for just 2 sec only.
7. Now mix both the millet batter and the dal batter together. Pearl millet/ kambu adai dosa batter is ready.
8. Before making adai, add chopped coriander leaves to the batter.
9. Heat the tawa and pour one ladle full of batter into a thick circular shape.

10. Pour few drops of oil along the sides of the dosa. Turn over once it reaches golden colour.

11. Remove the dosa when it is golden on both sides.

Serve hot with onion chutney.

Adai Dosa


Ingredients:

Parboiled Rice / Idly Rice

1 cup

Tur Dal

¼ cup

Split Green Gram Dal

¼ cup

Split Bengal Gram Dal

¼ cup

Urad Dal

2 tbs

Water

3 cup

Oil

1 tbs per dosa

Salt

To Taste

Red Chilly

3

Curry Leaves

1 spring

Cumin Seeds

1 tbs

Asafoedita

¼ tbs

Grated Coconut (optional)

½ cup

Chopped Coriander Leaves

2 tbs

Tomato

1 (small)

Onion (optional)

Procedure:

1. Take Rice and all the dal together in the ratio of 4 : 3 (1 : 3/4)

2. Wash and soak the rice for 3 hours.

3. Wash and soak the tur dal, split gram dal and ural dal together for 2 hours.

4. Soak the split green gram dal for 2 hours separately.

5. Grind the rice with red chillies and tomato coarsely. (3/4th only grounded)

6. Then add the dals in step 3 with rice and grind them coarsely.

7. Now add the split grren gram, cumin seeds, asafoetida and salt. Grind this mixture for just 2 sec only.

8. Adai dosa batter is ready.

9. Before making adai add chopped onion, grated coconut and chopped coriander leaves to the batter.

10. Heat the tawa and pour one ladle full of batter to a thick circular shape.


11. Pour few drops of oil along the sides of the dosa. Turn over once it reaches golden colour.


12. Remove the dosa when it is golden on both sides.

Serve hot with Coconut chutney or Mint chutney.
