Ingredients:
Carrot | 1 |
Beans | 10 |
Capsicum | 1 |
Cauliflower | ½ cup of florets |
Onion | 4 |
Tomato | 2 |
Red Chilly | 2 |
Green Chilly | 1 |
Coriander Seeds | 1 tbs |
Cumin Seeds | 1 tbs |
Ginger | 1 inch |
Garlic | 4 pods |
Turmeric Powder | ½ tbs |
Chilly Powder | 2 tbs |
Coriander Powder | 1 tbs |
Methi leaves | To taste |
Coriander Leaves | Garnish |
Cashew Nut | 10 |
Vegetable Oil | 3 tsbs |
Salt | To taste |
Procedure:
1. Chop the onion and tomatoes.
2. Wash and chop all the vegetables into lengthy cubes.
3. Grind half of the onion, complete set of tomatoes, red chillies,coriander seeds,
4. Heat the oil in a cooker/pan, add the remaining chopped onion and sauté till it
5. Then add the paste, and cook till the oil comes out.
6. Add the green chilly and fry for a minute.
7. Then add turmeric powder, red chilly powder and coriander powder. Saute for
8. Now add the chopped vegetables and salt.
9. Add ¼ cup of water and pressure cook till 2 whistles in high flame.
10. Finally add the crushed methi leaves and cook till the gravy becomes thick.
11. Garnish with coriander leaves.
Serve hot with Roti, Chapathi and Parathas.
